Any ideas for light, snack-type dinners for toddlers?

My children (age 2 and 1) eat quite well at nursery and are not very hungry when they get home. But I still need to give them a dinner. Any ideas for something light, but healthy, and easy to rustle up? They (and I) are fed up with baked potatoes and baked beans, and cheese on toast etc. Also they need more than just cereal.

Arancini? I use last night's risotto to make up little balls, dunk in egg and flour then shallow fry.
Toad in the hole (part cook the sausages the night before then bung in oven for 30mins to cook batter.
Omelette
Eggy bread
Wraps with hot fillings like meatballs or roast veg and cheese (make up earlier and great in oven when home)
Pasta bake re warmed
Pitta bread with ham, humous etc.

Quesadillas. Dry fry a sandwich made with flour or corn tortillas and filled with chilli con carne, tonatoes and cheese, avocados mashed with spring onions, caramelised onions; whatever you fancy. I nsde some brilliant quesadillas with peanut butter and mashed bananas Smile

crackers, breadsticks.
Little chunks of cheese. small pieces of cooked ham or chicken.
chopped salad veg (cucumber, pepper etc)
Pasta with pesto stirred through.
soup.
Rice pudding with or without jam or stewed fruit.
Yogurt with or without fruit.
Toasties
spaghetti hoops in a bowl.
fruit toast with butter.
risotto
omelette.
home made potato wedges.

Thick, spoonable soup? Carrot and lentil goes down well here.
Scrambled eggs (I usually add something like cheese, ham, pesto, tomato sauce, or avocado)
Homemade quiche or fishcakes- freeze in slices/individually
Falafel
Beans on toast

All popular with my 16 months old!

Pitta pizza - pitta bread with tomato purée, cheese and whatever toppings you like, put under the grill for 5 mins or so.
pasta with pesto, creme fraiche and peas
Mini frittatas - make a batch in a muffin tin, then freeze and defrost as needed

Drop scones (sweet or savoury). Mine like them with a banana mashed into the batter, served with Greek yoghurt to dip them into.

We do things like:

Pasta and whatever sauce we've had the night before
Cheese and biscuits with cherry tomatoes
Dips and crudités
Pasta and pesto
Boiled egg
Cereal and banana
Toast
Hot cross buns

Scrambled eggs
Bananas
Hummus and carrot sticks
Cubes of cheese, ham and some nuts (if they can chew them)
Peanut butter on wholemeal bread
cheese cubes with apple slices or grapes
Plain roast chicken, shredded
Mashed potato formed into little patties with flaked fish or cheese and chopped vegetables, brushed with olive oil and baked.
Grilled mashed tinned sardines on toast
Cold pasta salad with sweetcorn, peas, tuna
Falafel. Perfect for kids as it has the same mouth feel as a chicken nugget!

Make a big batch of Swedish style meatballs (pork and beef mince mixed) fry them off lightly until just cooked then freeze. Bung a few in the oven to warm through and crisp up as needed. Ketchup for dipping, with some veggie sticks.

Make muffins using grated carrot, courgette and beetroot, wholemeal flour and substitute the sugar with agave syrup.

Thanks everyone for your speedy replies. Lots of great ideas there. Love quesadillas/drop scones (savoury)/arancini (very gourmet!). Can you freeze arancini??

My kids do like meatballs so will try that too. They especially like turkey ones which is good as turkey has higher protein content than chicken apparently.

Re falafel - do you make your own or buy them? Does anyone have a failsafe recipe?
