Slow cooking a chicken casserole - how do you stop it from getting bitty and frothy?

Every time I cook chicken pieces in the slow cooker I tend to get that bitty/frothy/scummy in my casserole.

What do I need to do to stop it? Have tried pre cooking the chicken and also tried coating it in flour. This was better but it still happened.

Thanks

Try using a perforated spoon to skim off the scummy bits during the cooking.

Use cornflour instead of regular flour?

I wouldn't bother with flour at all. If you want a thicker sauce, try adding potato, and the starch in that will thicken the sauce, or you could just reduce at the end of cooking. Agree with the skimming off too. This recipe works well, and is even better with guinea fowl: www.bbcgoodfood.com/recipes/6289/onepot-chicken-with-braised-vegetables

Not sure what I did differently but no scummy/bitty/frothy were in my casserole! Grin In fact it was delicious! DDs all commented on how much better it looked than last time.

Thanks
