Yesterday I got some lovely halfprice tuna steaks from Sainsbos - does anybody have a nice (easy!) recipe or should I just panfry like beef steak?

Whatever you do with them, just don't over cook them as they go a bit tough and dry. Best to do them very lightly. Tuna can be eaten rare if you want anyway, so in that sense yes - treat them like steaks.

Nicoise Salad??? - Yummy with proper tuna

crystaltips · 09/03/2004 11:46

When you pan fry only do one side as it will continue to cook through ... that's if you like it a bit pink like me ..

I usually do it with somesort of salsa ... chop up sone / all of the following :

mango
red onion
tomato
red pepper
dress with sesame oil and balsamic

serve with roasted new potatoes and a tossed green salad ....

Just off the the freezer and see whether I have any tuna !!

Jamie Oliver suggests griddling tuna steaks for just one minute either side so it stays pink in the middle but is seared on outside. Delia suggest 2 minutes either side.

Try this one:-

1 pound tuna steaks
salt and pepper to taste

Sauce
1 fennel bulb, thinly sliced
2 shallot or 1 half small onion, thinly sliced
3 cloves garlic, minced or pressed
2 T olive oil
1 14 oz. can tomatoes
3/4 tsp. dried oregano
1/2 tsp. dried rosemary
salt and pepper to taste

Serves 2
Caramelize fennel and shallot or onion in 2 T olive oil. Add garlic and cook for about one minute. Add tomatoes, rosemary, oregano and salt and pepper and simmer for ten to fifteen minutes.

Grill or pan fry the pork chops or tuna steaks until done to your liking. Spoon fennel sauce over meat and serve.

Yummy....

Another Jamie Oliver one:
Seared encrusted tuna steak with Fresh Coriander and Basil
it has in it red chilli, coriander seeds, garlic, basil , fresh coriander, seasoning, lemon juice. Mix it all together in a pestle and mortar and coat the steaks before grilling

It's fab

Thanks, everybody!

I made mothernature's tomatoey sauce in the end - with salad potatoes and green beans - and they all loved it! Some of the pieces were quite thick, so even at 2 mins a side I ended up undercooking them a bit, but there's none left...will have to get it again!

Glad they went down well Janh! We all love tuna here too, including DD (23 months).

crystaltips · 09/03/2004 22:05

NO !! thank YOU Janh .... saved me the effort of wondering what to cook ....

2 clean plates over here too !!!

Any more anyone? I have a very old friend (as in haven't seen him for 4 years) coming for supper tonight and I've bought tuna steaks. I know how to cook them like steaks (I like mine like sushi) but would like something as a sauce or marinade. TIA!

WideWebWitch · 16/03/2004 10:58

Ingredients I have in the house: fresh basil, most herbs, spices, mustards and oils. No lime although come to think of it I think I have Jif lime juice. I've got a lemon, butter and pepper too but no capers or chillis. I suppose I could go and get them but have already been to Sainsbury's with the vague idea that I'd have the other stuff I needed. Probably. But now am stumped for ideas

Janh · 16/03/2004 11:15

www, I haven't looked at any of these but maybe one will do? (There are several pages!)

Twink · 16/03/2004 11:47

A recipe I use quite a lot in the summer is to marinade the tuna in lime juice for a while, I'm sure Jif will be fine but it would work with your lemon too & you could add the zest of that as well.

Mix some chopped sundried tomatoes and some chilli paste into some butter. Grill the tuna and top with the butter at the end.

Another fab one involves rice wine, soy sauce, sesame oil, rice vinegar, 5 spice powder, spring onions & root ginger which I'll happily post if you want it but it's quite longwinded so I only want to type it in if it will help !

WideWebWitch · 17/03/2004 12:12

Dunno why I missed this yesterday but thanks for the offer Twink and the link Janh. In the end I just went with my boring old favourite of garlic, ginger, honey, lemon juice and soy. It was very nice but I must do something different next time.
