Inspired by the one running in chat where people are trying to eat healthier, I wondered if there were posters who'd like to join me in my quest to eat cheaper.
Our backstory is that we have a leaky extension roof that needs redoing at a cost of ££££s which going to hammer our savings. We really want to save hard for the next few months, and one of the things I am tackling is food.
I have a big freezer full of stuff, and cupboards groaning with dry goods and an unfortunate habit of just buying stuff because I fancy a particular meal. So trying hard to plan, use what we have and only supplement with fresh fruit/veg/milk/butter etc.
I am keen to share & swap cheap recipes. Especially lunches as I am a SAHM with a 2 year old so can be really tight about my lunch in terms of cost, as I have the luxury of being able to cook it. Today I made a risotto just with normal rice, handful of dark lentils for protein and some onion, bit of carrot, and a sprinkling of freezer veg (peas, corn, chopped green beans), had it with a poached egg of top and lots of L&P and it was really lovely, if a total bastardization!
So lots of freezer diving! Tonight we had a slow cooked little lamb shank (yellow stickered last march...) with pearl barley and lots of onion, swede, carrot, and fried cabbage.
Tomorrow I am getting out some sausages and doing them with neeps n tatties and cabbage and making onion gravy. (spot the cheap veg theme...)
Lunch is leftover lamb & barley stew with some bread. DD (2) will have a cheese sarnie with cucumber & cherry tomatoes because as far as she is concerned that is the nicest meal on the planet. Easily pleased!!
I DO NOT NEED ANY FOOD SO I WILL NOT SHOP!!
