Tried and tested sweet potato wedges/ fries recipe please

I have some sweet potatoes that I've bought to accompany some BBQ chicken and nachos with cheese and thought wedges or chips would be nice.

But there are loads on the interweb with varying reviews so I don't know which one to choose. I'd like them to be crispy so I can dip them in soured cream.

Any recommendations please? Thanks.

Probably not much help but there is a recipe in the Jamie Oliver book Save with Jamie that is yummy. It's the side to his Jamie's Fried Chicken recipe.

If you want them crispy then slice them quite thinly. You just brush them with oil (I use rapeseed oil but sunflower good too) all over and put on a baking tray. Bake for about 30 mins - you can keep checking them until they're crisped to your satisfaction.

I find that sweet pots never crisp up as well as white potatoes though, so you might want to do a mixture, if crispiness is important Grin

Slice thin put in a big bowl add enough oil to give a good coating then paprika/garlic/salt/pepper whatever you fancy give them a good mix then cook for around 30 or 40 mins depending how thin you cut them.

Do I peel them first? The skins look a bit weathered.

Funny! Some of the recipes say bake for 20 mins. Hmm

I've found the Jamie recipe so might try that if DH gets back in time with some polenta. I can see how that would help them go crispy. Otherwise I'll just do with oil.

They're lovely when you sprinkle a little of the pizza oil you see in French supermarkets. Basically it's sunflower/rapeseed/grape seed oil with herbs and dried chillies soaked in it.

We just cut them into wedges - peeled - and put some oil in a freezer bag, add the wedges and shake around a bit until they are all covered in oil and then bake in the oven.

Works for ordinary potato wedges, too.
