Cooked somenting new for DH and I and for the kids to eat tomorrow.
It is soooooooooo spicey even I won't manage it.
What can I add to cool it down?
Have tried Cream, not working.

Potatoes are good to absorb the chile, they also do wonders for over salty dishes.

Cut them in wedges and add it to the thing.

Haven't tried this but saw it on that prog 'Trade Secrets' by a curry chef. Cut a lemon in half and stir it in with the food, then take it out (sorry don't know how long it's supposed to stay in there). Friend also told me once to do same thing with a raw potato, just stir it around then remove it. Let me know if it works!

does milk cool down spicy foods better than water or juice?

Yes. A chemical called capsaicin in the peppers binds to your taste buds and feels like they are burning the hell out of your mouth. Water does nothing, really, but dillute it momentarily, and sugary juices make it worse by opening up your taste buds and allowing more capsaicin in. Milk, on the other hand, binds to capsaicin more tightly than capsaicin binds to your taste buds. When you drink the milk down, the capsaicin goes down with it.

So I guess it should work in the meal???

Only thing is we are starving so want something really quick.

I have sliced a lemon in half and put it in. Wil let you know how I get on.
Might put some sugar in as well.

Something quick? cook another dish and leave this one for tomorrow. Erm sorry... being a Mexican have sent many dishes to the rubish bin as they were far too hot to be edible. (chile is a condiment, not the true escence or main ingredient of the dish)

However, if you decide to eat it (at the risk of ending with temporary loss of hearing, or upset stomach), bear in mind that chili is a fatty thing, so anything with lots of fat (milk, for instance) is good to shift the oil from the chile that sticks to your tongue. Bread is also good, water is worthless.

Well it has already cooled down. Still spicy but eatable.

Not sure though if its just that I have done so much tasting that I can't taste the spiciness any more.

Going to keep the lemon halves in it for a while. Have also added cream, milk and about a dessert spoonful of sugar. The sauce actually has a nicer taste to it now then when I added all of these things

Thank you all for your advice. I normally use MN for toddler behaviour advice but now I know I can rely on Mn'rs for other emergencies!!!

btw it is Italian Fusilli Sausage Ragu.

Umm Chandra I love Mexican food. Any good recipes??? Used to work in a Mexican takeout. Couldn't stop scoffing the stuff. Especially the fajitas!

Off to eat this thing now.

Well meal has been eaten and enjoyed. It was still a bit too spicy for us but at least we know the next time to only put a quarter of crushed dried chillis in instead of a full teaspoon and also to add sugar, lemon, milk and cream.

Heat 1 tbls of olive oil in frying pan. Saute 1lb cocktail sausages for about 5 mins until golden. Drain on kitchen roll. Wipe out pan and heat further 1tbls olive oil. Add 1 thinly sliced yellow and 1 thinly sliced red pepper and 1 large red onion sliced. saute for 5 mins. Add 2 crushed garlic cloves and dried crushed chillis (receipe says 1 tsp but was far too hot, will add 1/4 of that next time). Cook for 1 min.

Meanwhile cook Fusilli pasta.

Return sausages to the pan, pour in 4fl oz red wine, allow to bubble down. Add 4004 tin of chopped tomatoes, and 1 tbls tom.puree, season to taste.

Cover with lid and simmer for 10 mins.

When pasta cooked mix altogether and serve.Easy peasy.
