Ideas for dishes including green vegetables?

Other than just cooking cabbage and broccoli and eating with traditional style dinner, any other suggestions?

Things like spinach and broccoli and other greens apparently contain alot of magnesium which I have read today is good for inducing sleep and relaxation. I am struggling to sleep well at the mo and hope this might help.

But am stuck for how to incorporate more green-veg rich meals into diet. We tend to eat alot of mediteranean (sp?) type veg such as peppers, aubergine, courgette at the moment.

broccoli and leeks in cheese sauce
spinach and ricotta lasagne
sag aloo (spinach and potato curry)
(in fact spinach is great added to any curry-type dish)

Make a pasta-type sauce and, just before it's done, put some cubes of frozen spinach in to defrost in the sauce. Mix well and - hey presto!

Chopped spinach is also great in pancake mixes - we call them 'green pancakes'.

Fry salmon steaks in their own oil (ie don't oil the pan). Remove and put aside. In the same pan cook any shredded greens you like, except broccoli. You can use lettuce, cabbage, spring greens, spinach, pak choi, leeks etc. You may need to do them in batches, putting each batch in a collander over a bowl as it's done. Save the juices. Use plenty of seasonings: bouquet garni if you have, freshly ground black pepper, bay leaf, almost any herbs, garlic, nutmeg. When you've cooked all your greens, squeeze out as much juice as poss, return to pan and cook some rice in it. Add more water (or other liquid) if needed. Then combine fish, greens and rice in a bowl with several eggs and some grated cheese. Wrap the whole lot in puff pastry, brush well with beaten egg, prick all over and bake in medium oven for...oooo...a generous family-sized one takes about 1h15m for us. Nicest eaten cold the following day, I think.

frozen spinach is great isnt it? compared to washing bags of the fresh stuff which then disappear to nothing when cooked

is pasta bake just a pasta dish finished off in the oven, or do you put the pasta in the sauce uncooked and then bake in oven?

I got a terrific book from the library. Real food for kids by Rachael Anne Hill. Although the title is for kids the recipes are very family orientated. Tonight im making wholemeal vegetable quiche and there's also a recipe for shepherds pie with four vegetable mash on top, in all it has 9 vegetables in it! highly recommend it, think it's on Amazon.

you niormally have to cook the pasta first and then bake it unless you buy a sauce from Homepride which, I think, you don't have to cook the pasta first.
Agree with the spinach - you can bung it in anything!

Very finely shredded savoy cabbage stir fried with smoked bacon and a tbsp of water to help it soften up a bit. Serve with pasta and parmesan. love it!
