Does anyone have a tried and tested recipe for chocolate cheesecake?

That's it really - I love chocolate cheesecake and sure I could make one but would like a recipe that someone else recommends rather than just finding one online or somewhere.
Also, I am pregnant so can't have raw eggs in it....
TIA

I have one for white chocolate cheesecake but it's at home - any good to you? It's baked so no raw eggs.

Tommy · 02/08/2006 12:54

mmm sounds good - I'm open to all offers
thanks - will look forward to this evening!

is in imperial measures I'm afraid (think I stole it from an american)

Start with a normal cheesecake base made with digestive biscuits and melted butter in a 9in tin.

1 lb cream cheese eg Philadelphia
2 eggs
1/2 cup sugar
6 oz white chocolate

Melt chocolate in double boiler
Mix sugar, eggs and cream cheese
Blend in chocolate
Pour mixture onto base in tin
Bake 20min at 180C
Turn off oven and let cheesecake cool with the door ajar
Serve with dark chocolate sauce, raspberry coulis etc.

I guess you could substitute the white chocolate for milk and/or dark, but I've never tried it - let us know how you get on!

ooh thanks MrsBadger - looks very straightforward - will give it a go probably not this weekend though as it looks like it needs a special occasion!

really it's too easy (and good) to save for a special occasion, but it does turn out big and quite rich, so make sure you've got lots of friends round to help you eat it!

not a cheesecake, but delia does an amazing chocolate torte in her CHristmas book (try delia online). It's basically just chocolate and cream and liquid glucose and it's seriously good.

(the recipe makes heaps tho. i usually make it as she says but do it in 2 smaller tins and freeze one. freezes beauifully)

Tommy · 02/08/2006 21:07

thanks - I'm trying to think of an occasion now!

take all the packaging off and rough it up round the edges a bit.

Or say

"sorry didn;t have time to cook was being consulted on the situation on the Middle East (on Mumsnet" and brazenly seve in box.

Tommy · 03/08/2006 14:49

any more ideas?

tommy I'm sorry, I totally forgot to post last night.
Here's Nigella's out of domestic goddess, a book I am very fond of (tho some of the recipes need a bit of tweaking I find).

I haven't tried this btw so cannot vouch for it...

Process 125g digestive biscuits and 50g soft/melted butter, press into 20cm springform.
Put in fridge.
Beat 500g cream cheese, add 150g caster sugar, add 3 large eggs and 3 large egg yolks, one by one.
Beat in 175ml sour cream and 0.5-1tsp lime juice.
Fold in 150g melted plain chocolate to give a marbled effect.
Line Springform with foil on the outside twice. Add cheesecake filling. Stand tin in roasting dish and pour in hot water 2-3cm up side of cake tin. Cook for one hour at gas mark 4/180C.
When ready it should be brown on the edges and just set in the centre.
Strip off foil, leave tin to cool, then onc ecool, put in fridge before unmoulding and serving at room temp (she says....)
hope it's good!

I have a beautiful one for coffee cheesecake. If you want it, I'll post it on here.

Tommy · 04/08/2006 12:46

thanks clary - don't worry about forgetting - I have realised that some people have better things to do in the evenings than while away the hours on MN
Thanks maggi for your offer but coffee doesn't really do it for me in quite the same way as chocolate.....
Thank you all very much - I'm definitely going to try them out
