I'd like to eat vegan one day a week...

I have some ideas about how I'd like to do it, and wondered if someone could recommend sites/recipes.

I run about 25 miles a week and am training for a September marathon. I plan to eat vegan on a rest day and am not intending to lose weight particularly.

I try to eat one, sometimes two, meals pasta/rice/potato-free each day. I tend to eat protein a lot e.g. Eggs and beans for breakfast, tinned fish at work for lunch, chicken breasts as a snack, salmon for tea. I really like pulses and nuts, always have them in the house. I don't want to buy special vegan versions of anything, just eat fairly unprocessed. I don't eat butter at all anyway.

Can anyone give me some inspiration, please? I have two young DDs - food that they will be willing to try, plus food that will not be obv vegan to DH would be useful, as I don't want to make a big thing about it at home.

Ooh yes, well my DH is vegan and since he only turned about 6 months ago, I've spent a lot of time googling. I like this ladies site and the recipie which I've linked to is bloody AMAZING and I eat meat!

There's something about this recipie which is so delicious I can;t even describe it!

I also love the Dals on this page...I dont think that they're all vegan but most of them are if I remember correctly.

I make a lot of dal and a lot of soups...I make curries too...Indian food is excellent for vegans.

Ooh just saw you want it to be suitable for the DC...well my DC like the soup because it;s got corn chips on top and they're very used to spices etc...in your case I would also do roast potatoes or sweet potatoes accompanied by vegan burgers or what about those things..what are they called again...ball things in a pitta like bread with hummus?

Unfortunately, it's not for me right now as I am not well, so will go veggie instead. But would like for all my recipes to help someone else. It's so cheap as well! Wink

Kenji from Serious Eats goes vegan every year for Lent and has recipes and advice here.

Good cuisines - Indian (especially south India which is more coconut milk and less dairy), Chinese/Japanese/Korean, Ethiopian (members of the Ethiopian Coptic Church are vegan during their fast days), Greek (Greek Orthodox people go vegan for their Great Lent every year), Mexican, Caribbean.

Also look for recipes by the Seventh Day Adventist church - many are vegan because the church endorses veganism and vegetarianism for health reasons, and they avoid certain meats anyway. You don't have to be a member to use their recipes though and they are good ones. Most Adventists in the UK are from the Caribbean so you should be able to get nice recipes there.

The Vegan Society has lots of advice and recipes.

We're veggie, but tend to eat at least a couple of vegan meals per week. I do things like curry, lentil/veg/bean chilli, pasta with tomato and veg sauce, wraps with spiced veg, chickpeas and guacamole etc. I recently blogged an (almost!) vegan meal plan here , which might help with some ideas.

I'm completely vegan and have a great many recipes on my blog:

These are mainly calorie-counted recipes for those following a 5:2 diet, but, at the foot of that post is a vegan meal plan for a week which is not calorie counted.

The great majority of my bread recipes are vegan - apart from the odd cheese and tomato pizza - and all my other recipes are vegan, also.
