What's for pudding mum (or dad in this case!)

Hoping this may prove useful to busy parents or those who forgot pudding.

(we don't pud every day - most days it is a couple of spoons of yoghurt and some fruit but for today....)

Very quick and easy "Perfect Sponge Pudding"
And to remember easily
4,4,4+2+ 4mins

That is 4oz softened butter
4oz caster sugar
mix in mixer
add 2 or 3 small eggs whilst mixing in mixer
add 4oz SR flour and mix till gone

Butter around inside of Pudding Bowl (Glass/Pyrex/Medium sized)
Pour in mix
cover with cling film and poke a hole in it

4 mins on high in microwave

Typing this in probably took longer than making it - and I used 7 and 5 year old boys as .....helpers (and I did manage to retrieve all the dropped eggshells).

Turn out onto a plate and add couple of spoons of your fav jam/treacle/honey - whatever and your best thick custard ;-))))

Serves 6 - or 4 with extras for the cook (in this house anyway).

It really is foolproof I hope - and really quick- 10 mins from cupboard to smiling faces - including boiling the milk for the custard.

Honestly, it does. Have only recently re-started doing this - such is the quest for quick and easy puddings occasionally.

The simplest of recipes above has worked everytime so far - and comes from my mum. Hasn't poisoned the in laws or kids yet.

If the very bottom (or top when tuned out) doesn't look quite done - another 30 secs will do it.

Variations - add a couple drops vanilla essence to the mix.

Or Ground Ginger - plus golden syrup

Or Cocoa powder

Or........

Ha ha that takes me back! It was the first recipe from the user manual my mum tried when we got our microwave.

I remember watching it rise through the door. It was very space age! I think we lived on it every Sunday for a year, it replaced the sponge in a tin deserts from Heinz.

Might make one tomorrow...and some microwave custard.

I think our recipe one had the jam or syrup in the bottom of the bowl before the sponge mix went on, so it melted and became an upside down pud.

Aye - the jam/treacle in the bottom was the way we used to but it can get very hot so - with a 5 and a 7 year old eager to get their chops round it- I just drop it on cold once turned out (soon warms up!)

Now those Heinz tins simmerring away in the pan of water fro ages takes me back to student sundays too-and packet custard.....

You had to simmer those cans in boiling water. My dad used to do a strongman trick and pull the can out of the boiling water with his bare hand while we cheered him on.

You can put the jam/honey/treacle in the bowl before you add the mix. Lemon curd works well too, with lemon zest grated into the cake mix
