I made summer pudding the other day, looked impressive and was really easy. Might be a bit 80's though.

SUMMER SURPRISE DESSERT

1 cup fresh seedless grapes, halved

1 cup fresh whole blueberries

1 cup fresh strawberries, halved

1 cup fresh peaches, cut in bite-sized pieces

1 cup firmly packed brown sugar

2 cups dairy sour cream

In shallow 9-by-12-inch glass dish, combine all fruit and mix well. Sprinkle brown sugar over the fruit. Top with sour cream. Cover with plastic wrap; refrigerate 3 to 4 hours or overnight. The sour cream will seep through the brown sugar to the fruit.

To serve, gently stir the fruit; spoon into sherbet glasses.

TIP: Any combination of fruits may be used: fresh plums, kiwi, raspberries, pitted bing cherries, etc. However, FRESH peaches, FRESH grapes and FRESH blueberries are a necessity. Frozen or canned fruits are NOT recommended.

we went fruitpicking at the weekend and have been dining on blackcurrant or gooseberry fools this week.

very easy: cook the fruit, push it through a sieve, add icing sugar to taste. whip some cream, fold it gently into some bio natural yoghurt and most of the fruit gloop. save a bit to dribble on top.

it is divine.

why not barbeque a desert - make up individual tinfoil parcels in advance with a mix of fruit in each one, a tablespoon of string alcohol (brandy or port) and a teaspoon of sugar, fold the edges over to seal completely. BBQ for 10 mins (or in hot oven for 8-10). Serve unopened (small is lovely when peopl open them) with creme fraiche

Bananas - put a slit in the skin, push through some choc and stick on the barbie. Serve with cream/ice cream.

Creme fraiche with lemon curd stirred in till it tastes nice and sweet. Put in freezer. That's it. Makes lemon ice cream - bloody gorgeous, piece of piss.

Variation on a theme

BBQ's bananas - keep whole don't split. When soft and mushy with blackened skins, serve, split skin and pour over maple syrup and serve with vanilla ice cream!
