My DS (5) has an after-school activity that means we don't get home till after 6. I like him in bed by 7-7.15ish so I need a really quick but reasonably healthy dinner...less than 5 mins to prepare if possible.

Anyone care to share their best ones?

On activity nights ds has pasta. Usually with peas, and either Philadelphia, or pesto and grated cheese stirred in.
If we have any chopped ham or pine nuts I mix these in too.

Quick, minimal washing up, pretty nutritious and ds likes it!

Stir fry veg with fresh or wok ready noodles + sauce (and prawns or cooked meat if not liking just veg)

Poached egg or beans on toast / welsh rarebit etc

Soup + bread

Those frozen potato waffles - apparently cook in a toaster + egg / beans on top

Omelette, salad and nice bread. Can add various 'bits' to the omelette.

Rice noodles (just soak in boiling water) with soy beans (frozen ones zapped in the microwave) or peas, or broccoli, soy sauce, bits of other stuff as available.

Mushrooms on toast (if he'll eat them). Egg on toast. Cheese on toast. Cherry tomatoes, carrot and cucumber sticks etc.

All of the above are good. I's also suggest "fake pizza " : pitta breads cut open, smeared with passatta, cubes ham (bacon if you have time to cook), mushrooms or whatever and topped with grated cheese. Under grill for few minutes.

Also tortillas with cheese/beans etc. Just pop into dry hot pan, turn over, add topping and a top tortilla. Warm then turn over and serve. We tend to do cheese only or cheese and Mexican beans but you could do all kinds of things.

Beans on toast

Doesn't hurt once a week

Sprinkle cheese on if they like it

We have this on a Tuesday night so I have this as my slow cooker day - stew or bolagnaise or chilli etc. either have rice/spaghetti pre cooked and just reheated or Cooke it as soon as get in (could get those microwave rice bags etc)

I'll sometimes do quick tuna melts - toasted whole wheat bread, tuna/mayo/herb mixture/ sliced tomatoes, grated cheese - under low broiler for 2-3 min or so. Serve with frozen broccoli florets, half an avocado and a fruit cup - something like that.

Also very fast with tuna - tuna burgers; tuna, 1 sliced green apple, egg, breadcrumbs, frozen kale if you like - they cook in minutes.

When I'm under the gun I sometimes serve a sandwich for dinner.

I always have wholemeal bagels in the freezer (NY&Co). My kids love a smoked salmon and cream cheese bagel, or whatever.

If your oven has a timer stick some potatoes in it in the morning to bake ready for when you get home. Then you can add some bits and pieces (for us salad/cheese etc) and you're done.

Scrambled eggs and smoked salmon

Boiled eggs with cucumber and bread and butter soldiers

Kippers

Poached haddock with poached egg and spinach

Lentil and carrot soup made beforehand.

youbethemummylion · 15/01/2014 19:06

On quick tea days we have sandwich and salad, cheese on crackers and salad, beans on toast, jacket potato and cheese, pasta and a sauce, egg and soldiers. 1 day a week wont harm.

Pantah630 · 15/01/2014 23:00

this biryani is quick and delicious! you can use frozen spinach if you put it in after the lamb too. It's my go to recipe if we're pushed for time Cub night.
