Inexpensive ways to eat salmon?

We don't eat enough oily fish, infact v little at all and I want to increase this, esp salmon as I've read that it's by miles the best source of omega 3. Mackerel also good though.

Please suggest some economical meal ideas... happy to use frozen/tinned fish.

Not particularly economical, but more so than individual salmon pieces, when we see in tesco whole salmon at half price (usually around christmas and easter) we buy a whole one, and cut it into portions ourselves. It then lives in the freezer til we want it.

Fusili pasta
Broccoli
Peas
Cheesy sauce

Make into a pasta bake with grated cheese on top. DS loves it.

I also buy the Birdseye frozen salmon with lemon and dill? Sauce. It's about £4.50 for 2 peices sometimes is on offer though. I serve with sweet potato mash and peas with grated cheese, on the potato and peas Blush

Also when fresh salmon is on special offer we often make a couple of Jamie Oliver recipes - one that wraps it in ham and has lentils on side and one that roasts it with green beans, tomatoes and olives.

Fish cakes.

Boil some potatoes to mash, about one medium potato for two fish cakes.

Chop up some salmon fillets into pieces about 1 1/2 to 2 cm cubes. About one salmon fillet for 4 fish cakes. Put them into a bowl, with some roughly chopped dill and some salt and pepper..

Mash the potatoes through a ricer, onto the fish. It will cook from the heat of the potatoes.

Mix it all togeer, then form the cakes, coating them in flour, then egg, the breadcrumbs. Shallow fry in olive oil, and when golden in both sides, pop them into the oven, while the rest are frying.

This is a bit of a faff, though not madly so, and a favourite, Chez Clause.

Sainsbury's and tescos both do cheap packs of salmon off cuts. We use them to make salmon and pea risotto - tasty, cheap and easy.

Jamie Oliver does a recipe in ministry of food , for salmon pesto parcels. They're really quick and nice.

What about salmon curry?

Salmon curry is a possibility I had genuinely never considered! Though actually I have a few recipes for tikka-d salmon so i might try that. DH adores chicken tikka so it could be a hit.

Salmon & broccoli pasta why did I forget about that?! And risotto - I do smoked mackerel risotto. Both have a fairly good chance of going down my picky 2 year old too.

That reminds me, I used to make this bake minus pasta (low carbing last year) an it's lovely. The addition of sundried tomatoes, capers and basil to a standard creamy broccoli & salmon combo topped with cheese made it taste really sophisticated.

I was also thinking of searing it for a crispy skin and having with stirfry veg, soy, ginger, garlic that sort of thing.

And maybe a frittata/quiche.

Further ideas greatfully received, we get bored easily, variety is v important!
