Olive oil, butter, garlic and finely sliced red chilli

Mushrooms cooked in butter & garlic, grated paremesan

Bacon, chilli and fresh tomatoes (yes I know its tomato, but it worht a try)

Tinned tuna and anchovies (small amount) cooked in loads of butter and black pepper is one of my faves (or anchovy and broccoli)

I do carbonara a lot - but best way is not to fry the onions and bacon peppers/mushrooms/whatever you're putting in - it is definitely to roast it all - gets the bacon properly crispy and is lovely (as well as requiring no attention for 20 mins while you put kids in bed)

Cicatelli Pasta with Fresh Crab, Chilli and Garlic
Make this quick dish, that?s ready in under 20 minutes, using our new cicatelli shaped pasta, with fresh dressed crab from the Fish Service Counter.
Serves 4
Preparation time: 10 mins
Cooking time: 8 mins
371kcals/11.8g fat/2.1g saturated fat 0.7g salt per serving
Ingredients
500g bag Waitrose Cicatelli Pasta (dried)
2 tbsp olive oil
2 cloves garlic, finely sliced
1 tsp Bart Crushed Chillies
2 freshly cooked dressed crabs, about 130g each (from the Fish Service Counter)
Juice of 1 lemon plus lemon wedges to serve
20g pack fresh parsley, roughly chopped
Instructions
Cook the pasta following the instructions on the pack and drain well, reserving a little cooking water in the bottom of the pan.
Meanwhile, heat the olive oil in a large frying pan and sauté the garlic and crushed chillies over a low heat for 1-2 minutes, until the garlic has softened slightly, but not browned.
Add the crab meat, lemon juice and parsley, season well and heat through until piping hot.
Add the pasta to the crab mixture, along with the reserved cooking water, and mix well. Serve with a lightly dressed rocket salad, some warm ciabatta and lemon wedges

I used to make a good cheese sauce, pasta, bacon & leeks
yum yum but fattening

suejonez · 25/07/2006 21:11

lemon juice (lots - more than you think you'll need) crushed garlic, sprinkle of olive oil and chopped up breaded fish cooked (seriously) Yumm and easy.

inspired by this thread i have just invented a pasta sauce from baby courgettes (homegrown ), broccoli, garlic, dried chilli & pancetta. all fried in olive oil, then creme fraiche stirred in at the end. delicious. i had it with penne & parmesan.

thewomanwhothoughtshewasahat · 25/07/2006 21:54

mmmm pancetta and parmesan. they have the power to make even courgettes taste good

Mercy · 25/07/2006 21:54

Would tinned crabmeat be ok for that recipe, poisson? Well actually too bad if it's not tbh!

Blondilocks · 25/07/2006 21:56

pesto mixes in well, or cold pasta salad with mayo & tuna & salad veg mixed in or on cold some of the salad dressings go quite nicely.

I usually just do a tomato base & throw in random veg & spices/herbs.

Piss-easy carbonara: while the pasta is cooking fry a couple of rashers chopped-up smoked bacon per person. Drain the pasta, then immediately return it to the pan and chuck in the bacon, an egg per person, parmesan and loads of black pepper. Bugger it all about with a fork until egg coats pasta and goes sticky. It's gorgeous and so easy. Yum yum I could eat a bowlful right now with a nice glass of white.
