Is frozen veg as good as fresh, if not why not, and if so, why does fresh have a better rep?

Things like frozen peas/green beans etc are actually better frozen because they go through a fast freeze process immediately after picking which preserves all the nutrients in them. Things that are not frozen actually start to degenerate on the way to the shops. Fresh is only better if it's local 'picked the day before' type stuff for things like that. Same with fruit, always go local over cold storage transported if possible.

of course you can undo all the goodness by murdering them in the pan like my nan... Yellow broccoli anyone?

thanks, so I am ok to keep using frozen veg then? I find it easier to digest, as I have mild IBS, so afraid I am a veg murderer too!

frozen veg has less texture imho - it's either crunchy or mush and that's it. It is pretty nutritious though.

Carmenere · 25/07/2006 10:12

The only frozen veg I would use are peas and I use frozen spinach for soups and pies ect. Nutrient wise frozen veg are fine but texture and taste wise I prefer fresh. Freezing vegetables makes them soggy. Best as Liquidclocks (strange name?)says to go for fresh and local if possible.

Frozen veg are fine (I would use frozen spinach when i can't find fresh).
It's just that most mixes are so uninspiring.

colditz · 25/07/2006 10:31

I must admit I use mainly frozen vegetables. I don't mind if they are boring, I'm not a veg fan really anyway. I like unhealthy food really, I just don't like what it does to me!

Colditz, but that is probably because you don't know how good veg can be.

Green beans and bacon in vinaigrette

Fresh beetroot,mint and fetta

Endive,walnut and blue cheese salad

Carrot,pine nut,sultans and cumin

Stuffed aubergines with lamb

colditz · 25/07/2006 11:04

no, it's because I have to obliterate them before I can eat them without getting a severe bout of diarrhoea. I can't eat

peas
Sweetcorn
Green beans
sprouts

I do like vegetables, not not when they are steamed to the consistancy of ketchup

how about the orange vegetables like carrot, butternut, pumpkin? You can still do a lot with these (and they are quite gentle tastes so good for kids aswell)

or the softer green ones like courgettes?

even things like bean sprouts are good for you and taste delicious in a stir fry (think you can get these frozen?)

colditz · 25/07/2006 11:10

Yes I buy those fresh, except pumpkin because I hate it. And courgette.

But I like fresh carrots because frozen ones really are rank, and butternut squash doesn't upset my stomach at all so we eat quite a but of that.

I miss cabbage though

Agree about carrots - actually always go organic with them as you really can tell the difference!

Carmenere - I'm an ex art student, think Salvador Dali (had to come up with a quick email pseudonym at 16 and it stuck!)
