Cheap, quick, low-fat, tasty, family meals

Is there such a thing?

Just wondered if anyone has any recipes? Or names of meals I can google.

I make most things from scratch but can be time consuming. Got two and half year old twins (not that fussy) and a dh who likes a big meal...

Any ideas?

Thanks in advance!

Clare :)

Hi Clare. We had one this evening - very easy, quick and cheap. Spaghetti Puttanesca. The sauce is one tin of anchovies, chopped up really small and cooked slowly in a frying pan so they go melty. Then add a teaspoon of capers, a carton of passata (or a tin of chopped tomatoes), some chopped black olives and chilli flakes to taste. Cook big pan of spaghetti, top with some sauce and parmesan. Really tasty - one of our favourite meals.

BBC good food oven baked leek and bacon risotto. Use low fat/reduce amount of cream cheese to reduce the cals. It's a staple in our house.

Another midweek staple for us is the bbc good food vegetable ragu with tagliatelle. We add turkey mince (as per tip at bottom) and serve it with pasta shapes. It freezes well, so we usually get at least one other family portion in the freezer when we make it.

Use Parmesan for topping pasta - the strength of it means you don't need much.

You can make soups and sauces by just simmering the veg in stock / tinned tomatoes - no oil.

Grill or dry fry meat.

This chicken rice is quick and tasty and easy to swap ingredients like ham if eg the kids aren't up for chorizo or prawns : )
