Rolled Sirloin roast left overs

Just been to the farm shop and treated myself to a lovely 4lb rolled sirloin roast (for £12). There are three of us, dh, ds(9) and me. It should last at least 3 meals.

Going to do traditional sunday roast tomorrow with yorkshire puddings. I would usually just reheat and serve leftovers with gravy during the week and dh will have some in sandwiches at lunchtime.

What else can I do with the leftovers?

I usually slice any left over roast meat and freeze it with the gravy. Makes for a very quick midweek roast. Use frozen roasties, veg as you like.

Recently have done the pubgrub thing with a massive slab of yorkshire pudding, beef and gravy over the top, pile the veg on as well

Bubble and squeak if you have mash leftovers

You could finely chop left over meat and make a cottage pie effort, I don't as am not keen on that, but Jamie Oliver and others have recipes for that.

Wasn't planning on freezing any, was going to eat it all through the week, but it might be too much red meat! Does it freeze ok without drying out/going chewy?

Anyone used leftovers (frozen and defrosted) to make a stroganoff?

Oooh, mince it up in a food processor (or chop it up really small if you don't have one); fry up some onion, garlic and grated carrot; add the meat and stir it about a bit; then add your leftover gravy (or bovril/bisto if you don't have any), cover with mash with some grated cheese or blobs of butter on top. Chuck it in the oven till warmed through and brown and crispy on top. Best Cottage Pie ever - I sometimes make roast beef just so I can have that the next day.

Btw, Michel Roux Jnr adds tomato ketchup to his - I don't find it needs it (though I sometimes add some Worcestershire sauce) but you might like it.

If you want to make stroganoff, I would make the sauce and put the beef in towards the end

You could also slice it into strips and use in fajitas, tacos or stir fry

Cottage pie sounds a bit of a waste of nice meat to me, only ever made it with mince (lovely farm shop quality coarse mince) before. If its much better with this meat might give it a go Smile

Fajitas sounds good. Have only ever made them with an old El Paso kit and chicken, but do have a kit in the cupboard.

Is the secret to only heat up quickly to keep from going chewy?

Honestly, it's wonderful. Not like any Cottage Pie you've had before. The aforementioned Michel Roux Jnr rates it as his top comfort food.

Wonder if it will stretch to roast, cottage pie, stroganoff and fajitas!

Especially if I bulk out with lots of roast veg, mushrooms, peppers/onions, works out quite cheap that way too!

I have casseroled our sirloin leftovers - cubed the meat then tossed in seasoned flour, then cooked slowly with a lot of red wine and veg. I also frequently make cottage pie fillings and freeze them, so a cottage pie can be whipped up really quickly. Beef massaman curry is really nice too - I use a paste Blush and cook up leftover beef with paste, some veg, potatoes and coconut milk.

I do tend to freeze all my leftover beef recipes because it is so expensive and such a treat, and I don't really want to eat red meat three times in one week!
