chorizo casserole - advice needed

I've got some chorizo (in a sausage not sliced) and I like cooking it with beans, onions and tinned toms - however have had mixed success - the flavour is always lovely but the chorizo itself is a bit hit and miss and can be a bit chewy - so how thin/thick should I slice it? how much should I fry it for before adding the toms? should I let it simmer on the hob or put it in the oven? and how long for? any other advice/recipes gratefully received

as for slicing the chorizo - i get it thinly sliced then chop it into 1cm ish slices...but always think I ought to leave it in the sausage shape and cut inot chunks...

I would try peeling the chorizo before chopping it roughly into chunks.
I also would dry fry it first to get rid of some of the fat.
