What is kosher salt

Is it sea salt, is it really anything so different I need to get some to use in a recipe?

Nah.

It's salt used in koshering, rather than salt that is specifally kosher. It tends to have bigger granules - a lot more so than table salt, and a bit more so than sea salt.

You can use any salt, but just be aware that you might need a tiny bit less of table salt if it is a volumetric measure.

Ooh - unless your recipe is using salt to draw the moisture out of stuff - then I think the bigger granules do have an impact, so you might need to switch up timings etc.

kosher salt is balls of salt not the tiny little grains. Where do you live? Try going to a kosher shop or butcher to see if they sell it, I personally have a recipie which says kosher salt that I have substituted with sea salt and it came out fine but it depends what the recipie is for...

I use Maldon salt in place of 'kosher salt' when it's specified in my burgeoning collection of U.S. cookbooks. The large flakes give it a similar volume to K.S. so I use the same measurements Smile
