Is there such a thing as a low fat, diabetic friendly cake recipe?

Has anyone got one, or can anyone point me in the direction of one? I've got a friend who is diabetic and has had major heart problems in the past ( massive heart attack, surgery etc) He's been saying how much he misses being able to have a nice home baked cake, and after he gave me a rather scrummy spinach based curry recipe I'd like to find him something in return.

So I need something low fat, possibly egg free that would be suitable for a diabetic (would using a sugar subsitute like Canderal be OK?) that tastes nice Anyone able to help?

I'm not a fan of diabetic food..I would cut down the sugar content of an ordinary cake recipe by up to half. Make a low gi cake or bake and eat a small quantity.

Fruit cake or ginger cake, oatmeal parkin with molasses..

IMO canderal and the like are horrid - cd try using honey/sultanas to sweeten instead?

agree zippitoes. or use honey or fruit/dried fruit.

I don't think he is either! He was only diagnosed a year ago, and I think it's really starting to hit how restricted his diet is, especially the on treat side.

ok this is a bit odd but tatses lovely. it does have 1 egg in it, but you would only be getting a tiny bit in one portion.apologies fo American measurements.

CHOCOLATE COURGETTE CAKE

3/4 c. raisins
1 egg beaten mixed with a splash of water
1 tbsp. artificial sweetener
3/4 c. veg oil
1 c. unsweetened applesauce
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 c. buttermilk
1 sq. unsweetened chocolate, melted ( very high 70% cocoa solids)
2 c. grated courgette
1 tsp. vanilla extract

Cook raisins until soft and set aside. Beat eggs until light and fluffy. Add artificial sweetener, beat until smooth, about 1 minute. Add oil and beat 2 minutes, then applesauce and beat about 2 minutes more.
Sift flour with soda, baking powder, cinnamon and nutmeg and add to mixture. Beat until stiff then add skim milk and stir until smooth. Add chocolate, courgette and extract, stirring well after each addition. Stir in raisins. Pour into an 8x13x2 inch pan. Bake 350 degrees 25 minutes or until done.

For cookies, drop dough onto ungreased cookie sheet by spoonfuls and bake 10 minutes. Cool cake or cookies on a rack 5-10 minutes.

Oh, and the Americans seem to always be substituting applesauce in for fat. I'm not sure how well it works, but it might help.
