I have:

  • Half a chorizo sausage
  • Half a pepper
  • Half a courgette
  • Some slightly-past-their-best spring onions
  • A few parsnips
  • Some potatoes
  • A few cherry tomatoes
  • Lots of different cheeses
  • Eggs

Also have the usual pasta, rice, herbs/spices etc.

I don't have any inspiration though. I'm also pregnant and nauseous and not fancying any of the things I would usually make. Any ideas?

What about some kind of frittata (obviously I don't know how to spell it)/spanish omlette type thing? You could probably use everything except the parsnip.

There's a thread which is just right for you. It has leftovers in the title. And was set up by MadameDefarge. I think that's the name anyway.

Mrswellyboot · 01/01/2014 15:26

Yeah omelette would be gorgeous
Or chorizo pasta bake
Quiche!

You could make soup with the potatoes and parsnip with some herbs

FamiliesShareGerms · 01/01/2014 15:27

I was going to say frittata too, though if you're queasy maybe try Spanish rice / paella type dish?

DontCallMeDaughter · 01/01/2014 15:27

You could make a nice minestrone soup with all the veg and chorizo and throw in some pasta.

Thank you. I was just looking at the ingredients thinking "what can I do with you?" so now I have ideas at least!

I'll look up that left overs thread too. Thanks Thanks

Squidgy rice. Stir fry everything in your list apart from the potatoes. Steam/boil and drain some rice.
Then stir in the rice to the stirfry, crack in two or three eggs and stir. Add a bit of soy sauce/gravy while you stir it in, and serve with optional grated cheese on the top.
It's our universal leftovers dish.

Pasta!
Sausage, pepper and tomatoes in separate pan, with juice /sauce.
then people can choose a to add ppropriate amounts of pasta and sauce to their own plates.

I absolutely adore gravy and have loads and loads and loads. However, when pregnant I couldn't abide it in any form whatsoever. I was the gravy police. DONT YOU DARE PUT ANY KIND OF JUICE OR LIQUID OR GRAVY OR ANY KIND ON MY PLATE - ARE YOU COMPLETELY HEARTELSS AND STUPID?

This was many, many years ago, but i remember it vividly

Thank you. I couldn't face fritata so made a kind of pasta bake with lots of cheesy sauce. Bump hasn't complained yet!

Tuscan Stew

1 Choritzo sausage (sliced)
I red pepper (finely chopped)
I red onion (finely chopped)
2 bulbs garlic (finely chopped)
1 sweet potato (cubed)
2 carrots (cubed)
1 tin tomatoes
teaspoon paprika
1 cup chicken stock

In heavy bottom pan fry in own juices the chopped choritzo and finely diced onion, garlic and red pepper.

Once the vegetables are soft, add the tomatoes, potato and carrots.

Add paprika and stock, bring to simmer and cook for 30 mins till Veg is soft and liquid has reduced to a thick sauce.

(I do this recipe for children and people who dont like hot food, for adults I used hot paprika or add chilli flakes)

Eat with crusty bread.
