New bread maker - underbaked around paddle

Got a Lakeland bread maker for Christmas and have used it the once so far. Followed the basic recipe provided in the instruction book. Also buttered the kneading paddle/blade thing before putting it in the machine, as instructed.

When it came to taking the bread out, it was stuck. When I managed to finally get it out, the paddle was still inside the bread. Got that out, leaving a hole in the bottom of the bread and where the paddle was the bread is slightly doughy still. I'm not sure if this was down to it being underbaked or from me twisting the paddle about from underneath the machine when the bread was stuck, causing the bread to push together and go doughy IYSWIM. Any tips about where I'm going wrong?

I followed the recipe exactly. Never used a bread maker before.

The paddle on mine sometimes gets stuck in the bread, but I just slide it out, rather than twisting, so it's possible you did just compact the bread taking it out.

I don't butter the paddle either, did you use a lot or just enough for an oily coating?

I think it can be a bit hit and miss until you find a recipe / method that is fool proof.

I have a panasonic but same principles apply. When the breadmaker beeps, I turn it off and lift out the tin. I leave the bread in the tin for around 10 minutes to make it easier to come away from the paddle and then turn it upside down and shake to dislodge the bread onto a cooling tray. Occasionally, the paddle comes away with it and I pull it upwards to remove before putting the loaf the right side up.

I hope this works for you. Maybe you could experiment with a little more time if the rest of the loaf can take it. Also, maybe look at wet ingredients volume with a view to reducing ratio.

I never buttered or oiled the paddle.

Thanks for all the tips.

It says to coat the paddle with a little butter or oil but I won't next time and will see what happens.

It comes with a little hook to fish out the paddle, which I only found out after massacring the bottom of the loaf!

Will try it without coating the paddle and will leave it to rest in the tin for a bit and keep my fingers crossed!
