My ds loves fish. He is 19 months old. Any-one got any recipies, especially with salmon?

Also how do you buy your fish? Not sure if I am brave enough to buy it with the head still on!!

I put salmon in scrambled eggs or there's
carbonara (pasta, eggs, salmon and cream)and
fish cakes (mashed potato and cooked salmon and then gently fried to heat thoroughly)
sole goujons (sliced thinly and covered in breadcrumbs and fried, then squeeze lemon over it)
for smoked haddock we have kedgeree (go easy on the curry powder)
you can baked cod by covering in yogurt and grated cheese on top
umm running out of ideas oh yes, a great favourite ...fish fingers sandwiches!!!
the fishmonger can take the head and skin off for you (I don't like looking at the eyes)

helen, this may sound like a silly question (I hate fish so have never cooked before having ds). For the fish cakes how do you cook the salmon?
And how long do you bake cod for? Thanks for your help. I am a fish novice!

Put a piece of salmon (or any other fish, but salmon and tuna are the best) on a sheet of foil,
add a few slivers of garlic or a little squeeze of garlic paste,
a splash of lemon juice,
a generous shake of dill,
a grinding or two of black pepper
fold the foil up loosely over the fish and fold over the edges to keep the steam and juices in, and bake at 180 for 20m (more or less depending on the size of the piece of fish).

Exceedingly yummy, quick and easy to prepare and virtually no washing-up.

Mackerel is very cheap yet is a very tasty oily fish. We generally buy it from the wet fish counter in the supermarket and ask the fishmonger to clean it for us. Treat as the salmon recipe I've just given, or alternatively score the skin and rub in plenty of grainy mustard, also put mustard in cavity, and grill for about 20m (I've forgotten exactly, this is dh's dish). The only trouble with mackerel is that it is quite bony, but the meat from the tail end can often be lifted off without any bones in it, so that's the bit we give our children.

We keep an eye out for offers on the more expensive fish like salmon and trout, especially skinless and boneless fillets, buy more than we need and freeze in individual portions (cooked or raw, because you can cook small portions from frozen).

This one is nice using the sauce and having it with a Rosti or salad. But for you 19month old use it as a pasta sauce very delish.
Need
Salmon fillets
Jar of sundried tomatoes
Red pesto
Creme fraiche

  • Cut a pocket in the fillets9make sure not to cut through
  • Stuff in some of the sundried tomatos & a little pesto
  • Bake in the oevn wrapped in foil to save juices for about 20 mins,for last 5 mins open out parcel
  • Add 2 tablespoons of red pesto to the creme fresh and heat in a saucepan.
  • At this pont u can serve , but for your ds break all the salmon up into peices and mix with the creme fraiche sauce and add to pasta. Very yum , you will find yourself licking the bowl!! I know scusting, as my neice says!!!

hi lyndesy66, yes cooked fish go into the fishcakes and scrambled egg and carbonara. I use the leftovers ...or if you're like me make sure you cooked loads so you do get left overs!! or you can use smokes salmon for a more fishy taste ( and then turn them into thai fishcakes for the adults )

there's a lovely jamie oliver one, blanche green beans which you've topped & tailed, get oven really hot. drain the beans, put them into a preheated roating tin, sling some salmon fillets on top with half a dozen anchovies cut into small pieces, plus a handful of stoned black olives, a few cherry tomatoes and drizzle with olive oil. cooks quite quickly (about 10 mins I think) and it's delicious, for you & ds

Really easy one -

Can of boned salmon
Steamed / boiled broccoli
Boiled potatoes (or microwave for 10 min and scoop insides out - saves peeling ) -
(same quantity of each ingredient)

Mash the salmon, chop up the broc and spuds, mix.
Add cheese sauce (180ml milk, tbsp flour, tbsp butter, 50g grated cheese)

DD loves this. Or you can make it grown-up style - mix salmon and uncooked broc in an oven dish, put sliced potatoes on top, pour cheese sauce over and cook at 180C for an hour or so.

This one was 'invented' by my best friend.

2 salmon steaks, skinned and then cubed
half an onion or a few spring onions or some leek
garlic
cream or creme fraishe
ready made, ready rolled flaky pastry.
beaten egg for glazing

Pre heat oven, fairly hot (see pastry instructions). Put the pastry on a greased baking tray. Fry finely chopped onions and garlic until transparent. Throw in the cubed fish and fry quickly for a minute or two. Add a dollop or two of creme fraishe, season and then put the mixture down the middle of the pastry. Roll it up and seal the edges with some of the beaten egg. Cut 3 or 4 lines across the top and glaze with the rest of the egg. Put in the oven for 10-15 minutes, or until golden brown.
Delish!
