Can I use previously frozen cream to make ice cream?

I got a bit over excited with the reduced cream in Tesco this morning. I bought it intending to make ice cream but I now realise you don't actually need that much (compared to what I bought anyway)

If I put some of it in the freezer as it is, can I use it to make more ice cream at a later date? It's a very easy, no-cook recipe.

I would imagine that it depends on whether it will be defrosted in the ice-creaming process, or just have some stuff mixed in and then back in the freezer (which technically then wouldn't be re-frozen but still frozen).

If defrosted you couldn't re-freeze. You could shove it in a blender whilst frozen, add your fruit and have instant ice cream though (to be eaten then).

How do you mix stuff into cream without defrosting it? Grin

Throw frozen or fresh fruits (banana, strawberries-whatever you like), or something else like peanut butter & honey, add cream and blitz.

If it's in a huge block it depends on your blender as to whether it would cope. You might need to break it up if you can (and freeze in ice cube trays or smaller portions next time).

But blending it would defrost it, so it's can't be re-frozen?

If you're quick you'd only be 'whizzing it up' in it's frozen state then putting straight back in the freezer. If it was left out for any length of time it would start to defrost.
