Which of these can I make ahead?

Am entertaining/catering for a few days starting tomorrow. I want to get some of the puddings/baking done ahead (tonight/tomorrow morning). Not quite as organised as I wanted to be!

So which of these can I make ahead and by how much? Any help appreciated!

Chocolate mousse pots
Mince pies (puff pastry)
Lemon meringue tartlets
Pecan pie/tart
Pineapple upside down cake
Quiche Lorraine

(Looking at that list, we appear to be having a 70s themed Christmas!)

If it were me, I'd do al, but the mousse pots. However, if you are serving them more than the day after, I would only really do quiche Lorraine and mince pies, and the others would be the evening before or so. The mousse would hold up for the day after but wouldn't taste or look fresh or that nice tbh, so I wouldn't make them the day before.

I would make them all ahead of time. Chocolate mousse keeps very well IME, so perhaps depends on the recipe.

Anything that is going to be reheated can be frozen, too.

I wouldn't make chocolate mousse, lemon meringue pie and quiche Lorraine more than 2-3 days ahead (unless freezing the quiche).

I would probably do all tomorrow and Tuesday but only do the meringue part of the tartlets the day you'll eat them. I think the meringue might go soggy!
Sounds nice though. Nothing wrong with 70s!
