Does anyone have an easy gingerbread recipe I can make in the blender?

DD1 wants to make gingerbread Christmas biscuits and I want to crawl under a duvet and sleep until January.

Is there a recipe I can whizz up in the blender?

I do these in the food mixer. Or I'd pop down to the costcutter and buy a packet of biscuits and a packet of icing pens and have done..

I use this but change the spice quantity

Bit bland so I double the amount of ginger & cinnamon and add a pinch of allspice. I also add bit more syrup sometimes. I roll it out thin and might bake for longer by watching it and taking it out before it gets too dark.

From Sainsburys magazine ( we have tried these, so easy to make and delicious):

125g butter cut into cubes plus extra for greasing
350g plain flour plus extra for dusting
2 tsp baking powder
2 tsp ground ginger
175g light muscovado sugar
3 heaped tbsp golden syrup
1 large egg

Grease 2 baking sheets with butter.

Put flour, baking powder, ginger and butter into a food processor and whiz til it resembles breadcrumbs. Add sugar and pulse to combine.

In a jug beat together the syrup and egg then add to flour mixture. Pulse until it all starts to come together, then turn out and knead until you have a smooth rough. Wrap an cling film, chill for 30-45 minutes.

Preheat oven too 200 C/180 C fan, gas 6.

Sprinkle work surface with flour, roll out dough to 5mm thick and cut shapes, place on baking tray.

Bake for 12-15 mins until lightly golden around the edges. Remove from oven, leave for 5 mins then transfer to wire rack to cool.

I use these two. I am hopeless with stuff like this unless I can use the food processor

Gingerbread cookies
350g plain flour
2 tsps ground ginger
1 tsp bicarbonate
100g butter
175g brown sugar
1 egg
4tbsp golden syrup

Sift flour, bicarbonate, ginger
Rub in the butter until like breadcrumbs
Add sugar
Break egg into bowl and add syrup
Mix everything together
Roll out to 1/2 cm max thick
Bake 190 for 12 mins or so

Gingerbread men
Ingredients
350g/12oz plain flour, plus extra for rolling out
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g/41?2oz butter
175g/6oz light soft brown sugar
1 free-range egg
4 tbsp golden syrup
To decorate
writing icing cake decorations
Preparation method

  1. Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.
  2. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.
  3. Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.
  4. Roll the dough out to a 0.5cm/1?4in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.
  5. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.
