I would hull them, liquidise them, and then freeze them in ice cube trays. Then you can make v cold smoothies whenever you like (strawberries, banana, milk, plain yogurt).

Strawberry jam - 3 tbsp lemon juice to 1.6kg of strawberries and 1.4k sugar.

Heat strawbs and lemon juice for about 20 mins, take off heat add the sugar and then boil rapidly and test for a set after 10-15 minutes.

Test by putting a teaspoon of jam on cold plate (i put some plates in the freezer) and when cool push your finger through it. It is set when the jam wrinkles when you push finger through.

Put into warm sterile jar (washed and then heated in an oven and if you dont have wax discs then a cirle of greaseproof paper put on top of jam will do.

Its really quite easy - i made strawberry jam for the first time last weekend.

If you buy jam sugar then you probably wont need lemon juice but the jam sugar i bought the other day (silver spoon or tate and lyle) had a strawberry jam recipe on the back of the pack.

It keeps for AGES then. Up to a year.

By the time you've mixed the strawberries in with the cream and meranigues you won't even notice they are soft.

Steep them in white wine vinegar nd they will flavour it - very nice for salads.
