I realy hate cooking in this hot weather but i can't live on salad all week, what can we eat without having to spend too long in the kitchen?

What about buying a cooked chicken (or cooking your own while you are out of the kitchen) and eating it cold with new potatoes and babycorn/green beans/mange tout that take very little cooking.

I am going to make Delia's bbq chicken this week and have it with new potatoes and green beans. So fairly minimal cooking.

I can't face cooking either so we usually just end up with Salad, mine DH's and DD's appetites all disappear with the heat

I'm making chilli tonight because it's easy and quick however don't think dp will thank me for it in this heat

Pizza for us tonight. Minimal oven time.

Will probably have pasta another night - as I have some pasta sauce in the freezer can just heat and add to pasta.

make a big bowl of gazpacho (usually I make enough for 2 or three times)
then have some serrano ham and bread
ice-cream
Pissaladiere is also good in hot weather, again make it big enough for two meals as delicious cold. Have a green salad with it
Salade Nicoise also perfect with very little effort

Bring lentils, water, and bay leaf to a boil in a 2- to 3-quart heavy saucepan, then reduce heat and simmer, covered, until almost tender, about 15 minutes. Stir in 1/2 teaspoon salt, then simmer lentils, covered, until tender but not falling apart, 3 to 5 minutes.

While lentils simmer, cook onion, carrots, celery, garlic, thyme, 1/4 teaspoon salt, and 1/8 teaspoon pepper in 2 tablespoons oil in a 12-inch heavy skillet over moderately low heat, stirring occasionally, until vegetables are just softened, 7 to 9 minutes.

Make vinaigrette by whisking together vinegar, mustard, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper in a bowl. Add remaining 1/2 cup oil in a slow stream, whisking until blended well.

Drain lentils in a colander, discarding bay leaf, and return to saucepan along with vegetable mixture and vinaigrette. Cook over low heat, stirring, until heated through. Keep warm, covered.
