Need lazy vegetarian meal for tonight/tomorrow

I am ill and weary. I don't want to do a lot of work.

But we need to have tea tonight. And I am doing a food shift at the co-op tomorrow so will have to feed 12 toddlers, 3+ adults, etc etc.

I have in the house (and would like to use up):

  • pak choi (bok choi, whatever)
  • spring greens
  • courgette

I have normal food, otherwise. I can go to the health food store, and figure I will almost certainly have to.

The food has to be vegetarian (co-op rules). Oh, and the co-op part has to reheat well in a microwave.

I am tempted to do quinoa with some sort of tomatoey sauce? Or I have a recipe for a vegan tagine, with chick peas, tomato, aubergine, and spinach, could use spring greens in place of spinach ...

I would normally do a stir-fry for us, but that wouldn't heat well for the next day's lunch would it? Oh, and stir-fries are hard to do in bulk, although I'd expect the kids to mostly just eat the quinoa anyway (being realistic).

chop up all the greens, cover in a cheese sauce and top with breadcrumbs and/or parmesan - reheats fine!

No cauliflower in this house, I hate the stuff. It's the only veg I refuse from Abel + Cole.

I think I'm finally doing a quinoa salad: quinoa, olive oil, lemon juice, spring onion, maybe some shredded courgette and tomato. Oh, and red pepper. Maybe some avocado? Or I might make some guacomole if I can be bothered. I did a stir-fry today and will bring the leftovers in to offer to the adults.

Oh, and grated cheese on the side.

Annoyingly, I am very tired and hot and worn out, although at least feeling less ill than I did last night (sore throat, hot). But I realised thanks to a phone call tonight that I am hosting the committee meeting tomorrow night. I am more than a bit behind on my NCT work, too.

Stuff the courgettes with cheese and nuts, brush with oil, wrap in foil and bake, yummy.

Oooh, prob won't do that for tomorrow (no oven to cook things in, have to nuke things if I want to heat them ... and do I want to heat things in this weather), but it's worth knowing about as an option. I struggle with courgettes.

Oh I bought this weird stuff made from fermented brown rice to serve with fruit, for dessert. Might do it tomorrow if I can be bothered with more washing up ...

What about crispy seaweed with the spring greens? And Nigella has some good courgette recipes iirc, hang on.

I usually stuff eith blue or goats cheese and add walnuts, just for future reference.

Crispy seaweed is ok cold, isn't it? That is kinda tempting.

I've, um, never deep fried anything, though. Probably not something to try tonight, with everything else on.

(Did I mention the builders are doing a last push, to clear out by Friday? And I'm trying to sort out a billion things for the new house, the teenagers who are visiting in just over a week, and our holiday which we leave for in under a month ...)

Oh ok, I can see why it might not be ideal! It is lovely, cold or warm though and children will probably eat it. You don't have to have the fat very deep.

Does this sound edible?

Quinoa, mixed with spring onions (if I can find any?) grated courgette, lots of tomato (deseeded I guess?), with a dressing of lemon, olive oil and maybe a bit of cinnamon? Or maybe soy sauce, and seeds instead of lemon and cinnamon?

And then some grated cheese on the side for protein. I guess.

Why don't you do a version of tabouleh except with quinoa. Tomatoes(deseeded), spring onions, use courgette instead of cucumber, loads of chopped parsley, loads of chopped mint, lots of lemon juice and olive oil and a touch of cinnamon.
Go and buy a couple of blocks of haloumi and chop it up and bake it for people to sprinkle over the top. You could actually do roasted lumps of butternut squash either.

Hmm, I think I have parsley in the fridge. And coriander maybe. Might be good to put some of that in. I should grate the courgette, I guess, so the lemon juice will go into it a bit and soften it up?
