Goose for Christmas dinner - what with?

We've decided on a break from turkey this year and have ordered a goose. Now I'm wondering what to have with it. Roast potatoes and yorkshire puddings are obligatory, we normally have sprouts, carrots and parsnips but what about stuffing? Bread and cranberry sauces? Or are there different accompaniments that go better?

I'd increase the quantity of apples and onions and put some outside the goose as well as inside.

At home now, I can supply some more details.
1 young goose weighing about 3kg
2 tbs chopped mint
1.25kg peeled cooking apple in wedges
1 bunch thyme, bruised
4 l sliced onions
50g unsalted butter

Oven at 180
Rub goose inside and out with salt, then mint
Stuff with half the apples and the thyme. Sew up
Grease baking tray, put rack on top, sit goose on rack
Cook 15 to 20mins per lb
Baste from time to time, take some fat out of tray half way through
Reduce to 160 after 90mins, cover with foil if needed
40mins before end, add half onions to pan w butter and baste
20mins later, add rest of onions and apples to pan
Garnish with mint parsley and thyme sprigs
