Squidgy biscuit recipe

Dd received a Lakeland Christmas biscuit mix a few years ago. It was like a shortbread and could be cut with a cutter, but it was more sort of squidgy like a cookie.

Does such a recipe exist outside Lakeland?

Try Dan Lepards cranberry snow cookie mix - that might be similar? Typing one handedly whilst feeding but easy to find on google.

Can it be rolled out with a rolling pin, so you can cut it? Looked at the Dan Leopard one, but would prefer one without oats

It sounds like you want a sugar cookie recipe, rolled out dough that looks like shortbread but bakes a bit squidgier because of the egg and extra sugar.

200g unsalted soft butter
200g caster sugar
1 egg, lightly beaten
400g plain flour, plus more for dusting

Beat the sugar and butter, as if making a cake until it turns lighter and fluffy. Stir in the beaten egg, then mix in the flour. Knead it lightly until it forms a ball and then put in the fridge for 30 mins before rolling and cutting.

Bake your shapes for 6-10 mins , the edges will turn slightly golden when they are done, but you do not want to turn them brown. 180c
