Peel it, cut it into small cubes (a little larger than peas) then simmer in salted water until tender but not mushy. Heat up some frozen peas, combine the two, add olive oil and a little celery salt.

Otherwise, just use as any root veggie.

Beetroot! It's really good. Give it a go and see what you think.

No, it's not a soup -- just peas with celeriac.. an interesting green dish.

JJ · 27/02/2004 17:08

Oops, drain the celariac, then combine the it and the peas. Does that sound better?

Slow-cooked Celery and Celeriac Soup - New recipe
Because the vegetables are very slowly cooked, this soup has lots of lovely flavour, and it's quite satisfying and filling, particularly with some Celeriac and Lancashire Cheese Bread (see link at the end of the recipe).

Purée of Potato and Celeriac with Garlic
This is a beautiful combination of flavours and perfect, as all purées are, for serving with braised dishes that have lots of sauce. Because you don't want to be mashing potatoes at the point when your guests are ... continued

Oven-roasted Winter Vegetables
This is always going to be an easy option if you're entertaining, as all the vegetables get cooked without any attention. One thing I have found invaluable, too, is being able to prepare them well ahead, which gives ... continued

Roasted Vegetable and Brown Rice Gratin
This is obviously a supper dish for non-meat-eaters, but I have served it to the most dedicated carnivores who, after initial apprehension, have loudly sung its praises. Vegetarians might like to know that a ... continued

Lisa78 · 27/02/2004 22:54

zebra · 27/02/2004 22:56

Celery root.

zebra · 27/02/2004 22:56

I think it just tastes like strong celery with extra texture & fibre... is that right?
