I need to take food to share to lovely neighbours but am alone this weekend with a DC with special needs and a toddler. What can I take that will look like I have made an effort but in reality will require none?

Caramelised red onion and goat cheese puff pastry tartlets.
These are really easy to make and very yummy.
You can caramelise the onions in advance (a day before or so).
Cut small squares from the puff pastry. Put some onions and a wee slice of goat cheese on top. Drizzle a bit of balsamic vinegar and stick in the oven.

Toms/cheese/basil or Parma ham and cheese.

Do you have a blender? You need four ingredients: a large jar of mayonnaise, a few peeled cloves of garlic, two drained tins of artichoke hearts, and a couple of handfuls of grated Parmesan. Precise measurements not necessary.

Blitz in the blender, but you want a bit of texture left, so don't purée it. Pour contents of blender into an ovenproof serving dish. Bake in oven until golden brown. Serve with crisps, french bread, crudités to dip etc etc.

It is the most delicious, unusual hot dip. Everyone loves it and will ask what's in it and can they have the recipe!!
