What would you say is the healthiest family meal that you make?

I feel I am a bit reliant on carby stuff, pasta, rice, potato etc, so looking for some ideas to spruce up our menu!

Stir fry of chicken, garlic, chilli, bean sprouts, carrots, broccoli and peppers.

Vegetable soup probably. Just shove it all in the pan with some stock cubes, a bit of black pepper, and hey presto. Soups are about the only thing i'm good at in the kitchen. I swear by them. i have about 10 cook books dedicated to soup. Carrot and cheese is so far my favourite.

We have different HM soups at least 3 nights out of 7.

Lentil hot pot.

Layers of sliced spud, dry red lentils, sliced onions, grated cheese, tomatoes and bacon (optional)

Layer in deep dish, cover in stock and bake for an hour at 200oC

This is from a WW recipe book so super healthy:
Fry some chopped spring onions with chirozo
Add a can of Cannoloni beans and some stock
Place a fillet of white fish per person on top
Add a dash of lemon juice
Serve with crusty bread
Really lovely spanish style stew

I do a few, but my current favourite is Roasted Butternut Squash soup. Roast a bns in evo. Then saute a sweet onion in loads of ginger and garlic. Add stock and cook on low for a bit. Add the bns and salt and pepper. Cook for a bit more and then blend until smooth.

We have it with a little ciabatta bread and a big side salad.

Salmon Tagliatelle with five vegetable sauce. My children are beginning to make such a fuss when it's served these days though Sad.

I do a good lentil spag bol - DD has it on wholemeal pasta and I have it on konjac (slim pasta).

Also home made minestrone soup with lentils and cannellini beans (carrot, celery, onion, courgette, tomato) - this is really filling and healthy.

I do huevos rancheros, which is crushed tomato, carrot and red pepper, chopped and simmered for about 20 minutes with pepper and an egg cracked in and poached at the end. This is really filling - I eat it with a sprinkle of parmesan and some mountain bread.

I do DD foil baked chicken with cheese and broccoli which is easy and healthy too.

"Indian" salad:

Pomegranate seeds
Cashew nuts
Diced and cooked and cooled chicken
Red onions and garlic (fried in olive oil and cooled)
Garlic infused olive oil
Mango chutney
Coriander (we used a squeezy tube which was lovely, blended in better)
Cucumber (diced)
Tomatoes (de-seeded and diced)

Served with either rice infused with tumeric, or cous cous, with a wedge of lemon and a dollop of greek yoghurt.

Slightly adapted from BBC Good Food, tis yummy.. Even severely ASD sister loved it, and if you offered her pom. seeds she'd normally throw them at you!

Sparklysilversequins how do you make your 5 veg sauce please? I like the sound of that.

The healthiest thing we do is grilled fish and veg or stir fry, usually prawns and veg. Not very exciting.

Brown rice and lentil dhal, packed with protein. Cheap too. A squeeze of fresh lime adds a great flavour to it.

Soups are the obvious choice, as they're all veg and no crap (mostly, I have been known to fry ithe onions off in a lot of butterWink )
But I think the healthiest meal we have regularly is three bean casserole, I slow cook it abd use a few rashers of bacon, or chunks of chorizo, a tin of butter beans, Cannelloni beans and kidney beans, in a tomato sauce and add grated carrot, onions, garlic, and kale or spinach. it's very hearty and very healthy.

We do alot of healthy meals. We use wraps as baskets by baking them over a wire sieve and serve salad and protein inside it. We do ratatouille with cous cous or serve in a strudel inside filo pastry (not so healthy). We do enchiladas which are full of veg and turkey mince. Fish topped with red pesto and baked is another.
