Christmas Cheeseboard?

I'm quite new to choosing a cheese board, as have always been very fussy about cheese. Lately I have had been brave and tried a few blue cheeses (and liked), so now want to experiment a bit and out together a really yummy cheeseboard for me and my DH for Christmas night / Boxing Day.

I love brie, cheedar, the couple of hard blues I have tried (didnt get the name of either), smoked cheese, soft creamy cows milk cheeses.
I HATE any sheep/goats cheese (the smell makes me heave), parmesan, manchego.

DH likes brie, camembert, stilton, really stinky soft blues.

Any suggestions of cheeses to try for a cheesy novice?

please search out stichelton, its an un pasteurised stilton, best I've ever tasted, like butter.

Do you have a cheese shop nearby? Usually they pretty good at letting you taste before you buy.

Try Shropshire blue. Not too strong/stinky. Nice with a charcoal cracker

If you like strong cheddar, black bomber is excellent. Very strong stuff!

blacksticks blue
crumbly lancashire
a nice smelly brie/ camembert of your choosing
a garlic roule (people will say this is peasantish but it is always the first cheese to go)
and a strong cheddar such as black bomber or grandma singletons

Those will suit all tastes

They key is a really good selection of biscuits and a good chutney, grapes, cornichons and pickled onions to go with the cheese.

oh and a cheapo smoked cheese as well - people go for applewood a lot these days but I find it cloying. A good old bavarian smoked does it for me.

Also you dont have to have a smelly brie/ camembert if you don't like strong smells, an unripe version of either will be just as okay and won't smell as bad.

Go to a really good cheese shop and try a few. You'll find some brands with sell their best in there and a slightly less good - but still tasty - will sell their other stuff to Waitrose. Worth working out what you want to splash out on.

if you live in the north of england get yourself to a Booths Supermarket and they will help you out and let you try a few.

A lovely, smelly runny Epoisse is a must for me; something mild and nutty like Comte or Tomme; Stilton or perhaps Gorgonzola. Find a good cheese shop and ask for advice for a balanced cheeseboard within your taste parameters.
