We're making sushi tomorrow; kind of a small party with friends. Um, what do I need? I've got some stuff, but not all, I'm sure.

And how do you make sushi?

Any suggestions gratefully received.

Good luck. I was bought a kit once and never got round to using it. Only I like sushi, DH thinks the thought of it is horrid I even have a proper rolling mat somewhere!

Ooh, any secrets Bron? My guests are/were my dippy friend who I adore and her husband. It's been postponed until Wednesday now (she forgot her fil would be here), so keep any tips a comin'!

prufrock, we live in a small town in Switzerland. The nearest decent sushi is a 30 minute train ride away. Sigh.

JJ, dh is Japanese, his tips are:-

  1. Wet your hands with cold water to handle the rice.
  2. Don't squeeze the rice too hard, dosn't taste so good.
  3. Dry the seawees before use, we fan it over the gas ring. 4.When you put the rice vinegar in the hot rice, fan the rice (not joking!), to make the rice shiny and it gets rid of excess vinegary taste! 5.Sushi/nigiri is best served at "body" temp. not after being in the fridge for hours!

Needless to say, he does this in our household!!! Good Luck, Oh one more tip from me, a really nice cold, dry, sake. Cheaper sakes are best served warm, put the bottle in some hot/warm water.

batey! I'm sorry for never replying to you. I printed out this thread and have used it a number of times since then.

The sushi was great. My eldest son loved it and now requests it regularly. My friend, however, forgot to bring the sake (argh) and I ran out of rice, but it was great fun.

I was just checking back because I can't find my copy from before.

ARGH! After posting that, I've messed up the rice. It's a gooey mess more suitable for a weird risotto. And it's all the sushi rice I have. I followed the directions, but quadrupled the recipe (should have known better).

Can I use arborio rice instead? It's either that or basmati or no rice. And use the normal 2 to 1 (water to rice) ratio?

Anyone's best thoughts are appreciated immediately.
