Brunch ideas

We are staying with friends over the new year period and a few of us have shared the food responsibilities.

I'm making brunch NYE and New Years Day and was wondering if anyone had any suggestions about how to make it a bit special. Hoping to do it a but different both days. I was thinking maybe American style pancakes one day and an eggs and salmon type breakfast another. But would love any better ideas.

brunch ideas here. Tbh I had been drinking nye, I would really like a full English breakfast or at least something involving lots of bread eggs and bacon or something similar to help soak up a bit of the booze.

Thanks for the suggestion. You might be right. I could do I kind of alternative brunch NYE and then traditional fry up on NYD. I'm pregnant so will probably be the only non hungover person, so will keep their need for stodge in mind.

Muffins served with crispy rashers of pancetta, poached egg on top then drizzled with maple syrup. Delicious

Kedgeree.....easy and you can make it ahead of time and then reheat when needed. Really simple and delicious

A friend of mine always made kedgeree with smoked haddock and grilled mushrooms and bacon on the side. It soaked up a hangover in no time was delicious. As Hepzibah says it can be made in advance

You can't beat Bubble 'n Squeak

Chakchouka with some nice bread to mop up the juicy bits.

Porridge with apples and cinnamon.

If you make kedgeree in advance add some double cream to it when reheating it, and add hard bolied eggs after reheating (I do mine in the microwave) it makes it even more delicious. we have it for Christmas breakfast.

I do love Kedgeree. I make it really regularly for dinner, but never had it for breakfast yet. I might make us a few things , like a breakfast buffet, including Kedgeree for one of the days and a traditional fry up the next.

NCIS how much double cream do you recommend when reheating? I have never added any cream to it before.

Oh I've just looked up a Kedgeree recipe and they suggest using boiled quails eggs. Love the idea of those for a really special breakfast.

I use a fat ladies recipe and just put a good slosh of cream in it when i reheat it but it's personal preference, it makes it slightly risottoish, hate it really dry and as I make it in advance and freeze it can be a little dry

For me it has to be Eggs Royale - Smoked Salmon and Hollandaise on a muffin or thick toast, with a glass of something bubbly to wash it all down.

That or if you have left over roast vegetables, consider a bubble and squeak concoction with chutney or hollandaise and thick cut smoked ham. Delicious!

We love pan haggerty for brunch. Potatoes, onions and cheese all cooked together in a pan, we add big cubes of ham but easy to leave out for vegetarians. Served with a fried or poached egg on top. Scrumptious and very easy.

We've recently been enjoying a recipe from Jamie's 15 minute book, which is basically:

  • Pancakes with sweetcorn, grated cheese and finely chopped chill mixed into the batter
  • American style bacon fried and then maple syrup poured over it at the end
  • Fresh tomato and avocado chopped with some fresh mint or coriander and lime juice

Pile avocado stuff and bacon on top of pancake and serve with a dollop of yoghurt.

It's yummy and great for a special occasion.
