I want to make some Florentines to give as gifts - anyone got a good recipe?

I use Delia. Works well.
Ingredients
5 oz (150 g) dark chocolate (70-75 per cent cocoa solids)
1 oz (25 g) butter, plus a little melted butter for greasing
3 oz (75 g) caster sugar
1/2 oz (10 g) plain flour, plus extra for dusting
2½ fl oz (65 ml) double cream
2 oz (50 g) whole almonds, blanched and cut into thin slivers
2 oz (50 g) ready-flaked almonds
2 oz (50 g) whole candied peel, chopped
1 oz (25 g) glacé cherries, chopped
1 oz (25 g) green glace cherries, chopped

Pre-heat the oven to gas mark 5, 375°F (190°C).

Method
Melting butter with sugar & flour over low heat - stirring until melted.
Gradually add the cream, stirring to keep it smooth.
Add all the remaining ingredients, except the chocolate.

Put aside to cool.
Brush baking sheets with melted butter & dust with flour.
Place heaped teaspoonfuls of the mixture on prepared baking sheets, about an inch apart Flatten with back of spoon.
Bake on a high shelf for about 12-15 minutes, or until golden.
Leave to harden on the baking sheets for 2-3 minutes, then quickly lift on to a wire rack.
Repeat with the second batch.
Melt chocolate. Place Florentines, base up, on a wire rack and coat the with warm melted chocolate.
Just before it sets, make a patterned, wavy line on each one, using a fork for traditional Florentine finish.

I made these last year, just beware that they all stuck to the baking sheets! Use plenty of butter/flour and remove them before they get too hard and crack. I also tried using baking parchment but they stuck to that too, so I covered up the scraps of paper that wouldn't come off with chocolate and hoped everyone thought it was a chewy bit of fruit Blush

If they do get too hard, stick them back in the oven for a couple of minutes to soften again.
