Gluten free flour in bread machine

(Originally posted in Allergies but no reply so hopefully more traffic here!).

Hi. Does anyone use GF bread flour in their bread machine? Do you get decent results?

I also need it to be egg and dairy free, so was thinking of using either Pure (though I've used that with wheat flour and the bread is quite 'loose' and tends to fall apart after a couple of days), or maybe oil instead? It's for my son who is weaning so I need it to be quite a dense bread that will withstand sucking!

This link to the might help Doves website might help.

According to Coeliac UK link here you have to be very careful about cross contamination so perhaps the breadmaker should only be used for gluten-free baking.

I tried without great success, but now dd is only dairy intolerant so ive stopped experimenting with gf flour. As far as dairy goes you can use oil (i use olive oil) or stork block (the stuff that comes in a foil wrapper, not the spread in a tub which is not dairy free). Oil or stork block give excellent results.

the recipes i use don't contain egg anyway. If your recipe says to brush with milk or egg, for example if you are making bread rolls, you can brush with oil or not brush at all and it will be fine.

Oh and apparently xanthum gum is the magic ingredient, it helps to mimic the stretchiness and elasticity of gluten.
