Freezable picnic food

(It is actually getting into summer here, I'm not that tough that I picnic in the winter)

We live near some lovely beaches. They're particularly lovely for evening picnics. Unfortunately DH -has an infuriating habit is very spontaneous and often declares we should have a picnic on the beach for dinner (in front of the kidsAngry) as soon as he gets home from work (just as I'm about to start getting dinner ready). Which involves a mad shuffle through the fridge only for everyone to have ham sandwiches again--

So that I'm not always the spoilsport saying no, does anyone have any clever ideas for picnic stuff that either freezes or will store in cupboards/fridge for a decent amount of time? (Nothing egg-based please DD2 has dairy and egg allergies, and while I can work around most things quiche/frittata etc aren't really changeable)

Tell spontaneous DH to have his picnic on the beach ideas via Marks & Spencer rather than expecting you to magic things out of nowhere!

Sarnies are freezable. So would tray bake kind of things.

For picnics we usually take sarnies, cakey things, crisps and fruit. So crisps and fruit are usually around and you could just grab the other things feom the freezer.

Cogito... If only M&S was nearby. And with the allergies, ready made stuff gets frustratingly difficult.

I guess I'll try to think of some more interesting sandwich fillings (and convince DD2 that the point of sandwiches is to eat the whole thing & not just eat the filling and chuck the bread "for the birdies"Grin)

This freezes really well and is delicious. After the Great British bakeoff I was inspired to have a go at making a picnic pie. This one is delicious - I changed the recipe slightly to make the layers as follows:
Pastry
stuffing
half the sausages (you can use sausagement)
apple sauce (keeps it moist - can also use cranberry at xmas)
Chicken (can use turkey)
apple sauce
sausage
Stuffing
pastry

I have never had a soggy bottom with this and the layers inside come out perfect

Everyone who has tried it has gone on to make it with great success :)

I was going to say homemade sausage rolls, cheesy parcels little lamb kofta meatballs which can all defrost and cook in oven, Pitta in freezer too so you can stuff them with meatballs and some salady bits.
