Cake experts tell me please I am not going to poison people - fresh cream ??

I was asked last minute to make a cake for this weekend ( baby shower) . They wanted fresh cream, marscapone and nutella in the middle , covered in fondant and decorated. ( Disclaimer I am not a professional cake maker nor do I charge for this ... its a favour). I called the person today asking when she wants the cake collected and she said Sunday lunchtime / early afternoon... I was convinced it was for Saturday . Oh bugger . Normally I keep fondant cakes in a cool place - at the moment cake is in the fridge but am worried about fondant cracking ( its not the usual make I use as I was too late to order it on line). Do you reckon its going to be all right in a cool place or should I leave in the fridge? Expiry date on cream was 5/12 and it says use within 3 days of opening ....Or should I make another sodding cake ??

Sure it will be fine in a cool place. Even if the cream went off (which it won't) it won't kill anyone it would just not taste nice, but with those sell by dates i'd imagine it will be just fine kept in a cool place Smile

Was the cream heated to add the other ingredients or just whipped? If just wipped, it will go off at room temp. As Fauxfox says, it won't really harm anyone, it will just taste bad

Thanks it was whipped and the other things whipped in with it. COol place is pretty cold its like a cellar with no heating !!

I would think that it would be ok then, though obviously no-one can say "yes it will be fine"

Thanks I have taken all the decorations off and put in the fridge and am hoping it doesn't crack . Will then take out Sun morning and re decorate !!

You've got a 4 hour window for ingredients which aren't stable at room temperature to be out of the fridge for. So yes, it needs to be in the fridge. The paste should be fine and shouldn't crack. You could always put a thin second layer of paste over the original layer if it does crack but you usually find that people don't notice these things!
