Inspiration please - cold packed lunches for toddler

Little background: toddler appears to have gone off reheated bolognese, pasta etc at lunchtime (so now I have a freezer full of child-sized portions Hmm), and we're probably approaching the joys of her being choosy with food. She needs a packed lunch for the CM for 3-4 days a week. CM obviously won't let her starve but I want to slightly preempt DD eating CM out of house and home by offering a more picky lunch. Slight difficulty is by the time she gets back from CM's in the evening she wants dinner, so not much time to make a great meal then either on those days.

This evening's rummage through the cupboards for a more snacky-style lunch has made an all-time 'classic' of a hot cross bun, some cold meat, cucumber, tomato (not sure she will eat this), that frozen mixed veg (normally loves this), usual yoghurt and fruit. DD will eat yoghurt and fruit till the cows come home, like most toddlers. Cold pasta is an absolute no-no.

What can I make to keep her protein/veg on a level, if there's a high chance tea on those days will be scrambled egg, beans etc?

My cm (years ago, dd2 is now 6!) used to suggest a couple of eggs, she would then cook them herself. (cm would cook, not dd ;))Small tin of beans or spaghetti hoops?

Milk drink or milkshake.

Cheese. Cheese spread and crackers that she might like to spread herself?

DS likes homemade banana muffins (i batch cook and freeze), breadsticks with a peanut butter or hummus dip, some dried fruit (he will not eat fresh fruit sadly) and some custard in a pot with pureed fruit (hates yoghurt). He also loves mini sandwiches with peanut butter or thin sliced meats, homemade scones and pancakes.

Thanks. I hadn't thought about sending beans or hoops for the CM to warm up but I'm sure she'll be able to do that. Hard boiled eggs could be good too. And I'd forgotten about peanut butter, I'm sure we have some in the cupboard somewhere.

I think I'm just worried that bread product, meat, cheese, veg, yoghurt, fruit every day might not be the most exciting or healthy lunch going. But at least it will be easy for the CM to keep re-offering if DD decides to refuse things.

sharon, can I ask what recipe you use for the banana muffins?

I use this one with half of the sugar and no salt. I make them smaller than suggested like fairy cakes and DS loves them (he won't eat bananas any other way), allrecipes.co.uk/recipe/36/delicious-banana-muffins.aspx
