I work full time and single mum, so leave at 7.30m and get in at gone 6pm every weekday so I make as much as possible in advance or cook quick and easy
Typical week
Quesillidas (dd loves taco bell ones) so dry fry or put 2 tortilla wraps under grill under lightly brown and crispy both sides. top 1 tortilla with meat of your choice, we have roast pork left over so will use that tomorrow and will quickly fry to reheat with onions and peppers, garlic and some seasoning, grated cheese and under grill again. top with diced cucumber, tomatoes, sliced lettuce, guacamole etc place other tortilla on top and slice into pizza slices.
Spag bol or sheph pie (prepare night before so just matter of reheat and some garlic bread for spag bol)
I am lucky in that my dd loves veg, but as a tip which I have fed to many of her friends who apparently hate veg but they always scoff is that to my spag bol and shep pie I always start by frying finely diced onion with grated carrot ( u don't even see it in there as melts to nothing) and also once I have added the sauce to whatever one I cut the broccoli from the top so your literally cutting off the tiny dotted sprinkles of broccoli and add a few handfuls, again you cant even see it!
my dd loves loves broccoli and cauliflower cheese!! worth a try along side a roast
Roast dinner (I will cook the meat the night before and make some cheesy mash, so when I get in just cook some veg and yorkies and reheat rest)
The microwave rice and veg steam packs my dd will wolf down
Stir fry , easy takes mins
Stuffed jackets, my dd loves these!!!!, cook jackets night before, scoop out all potatoe leaving just small skin and put skins in oven to crisp for few mins. Mash potatoe as you normally would, I then add lots of cheese, spring onion and cooked bacon but u can use anything. add cooled mixture to cooled skins and then just re heat next day under grill until golden.
