Simple , non milk sauce for a chicken pie please

My son is dairy intolerant and can't have a usual white sauce in chicken pie. Has anyone got any alternatives?

I'd just use a thickened stock/gravy.

Make white sauce with Oatly milk. Snd a chicken stock cube. Tastes same. Or Oatly cream.

I make a roux with Pure dairy free margarine and flour then add chicken stock a ladle full at a time and whisk the sauce smooth. My DS can't have dairy either.

I do a roux then add hot stock most of the time as it's lower fat than milk. Works well and tastes good.

I will try the roux and stock sauce.
I'd use soya milk or coconut milk ( he has soya yogurts and coconut milk for cereal and milkshake) but I think my other 2 would moan!
Soup idea sounds great too!

roux and stock, with a pinch of tarragon

(maybe finely chop an onion and use oil if you don't have a non-dairy spread to use in roux)

Mayonnaise whisked through chicken stock makes a lush sauce. Sounds gross I know but it worked brilliantly when I tried it. The first time I did it I made a mayonnaise so that it would thicken the stock, but the second time I used jarred stuff and it worked just fine. Was yummy and everyone ate it!

Not sure valium, I never measure anything, just make up a stock cube/stock, and then add the mayo a tablespoon at a time tasting as you go till it is thick enough but not too mayonaisey! I can't even remember if I just used the heat of the stock to thicken, or if I put it back on a low heat. Sorry, my cooking is never the same twice!
