Egg glut!

Thanks to DH thinking he was feeding the five thousand at the weekend and the organic delivery coming tomorrow (so too late to change anything) I am going to have a grand total of 24 eggs in the house tomorrow! We're going away on Thursday night for a few days too! Aaarg!

Now I know we can eat a few of them between now and Thurs, but we won't get through them all (and if we did I'd be constipated till Easter, sorry TMI Blush but true).

So does anyone have any ideas for recipes I could cook and freeze, or ways to, I don't know, preserve a dozen eggs??? to help me use them up.

You'll gather from this that I hate waste! Grin

Quiche Lorraine = 8 eggs
8" sponge = 4 eggs
4 main course soufflés = 10 eggs
24 meringues = 6 eggs

I separate my yolks and albumens. The albumens freeze well and the yolks thicken up carbonara dishes and can be kept in the fridge for about a week.

We keep hens and using up eggs is easy when you know how. Grin

They do keep just not on this house airtight container with a desiccated sachet inside.

I really recommend Micheal Roux's book 'Eggs' it contains lots of wonderful recipes and ideas for use.

If you are only going away for a few days then I'd make the meringue when you get back. Eggs keep for a month so there is no panic.

Also wonderful converted into a Black Forest Gateau (double the soufflé recipe and treble the mouse adding kirsch soaked cherries to the mousse layer)

Expensive on the eggs (8 per 6 people for the log, 18 serves 10 for the BFG) but not a problem here!
