Fish curry - ok with cheap fish?

I was thinking of cooking a fish curry for some friends (probably the Rick Stein madras one - can't link as on phone but it's a tomato and tamarind base). He talks about using great, fresh fish in the recipe blurb. But I am on a bit of a budget drive and have some Sainsburys basics white fish fillets in the freezer. Does anyone know if they will work or if this is one of those dishes where the quality of ingredients really matters?

What you need is meaty fish so it stays in chunks. Don't know what your Sainbury's ones are but pollock would be ok. Just put the fish in at last minute so doesn't disintegrate.

defrost them fully first then give a good pat dry on kitchen roll or a clean tea cloth before adding to your sauce. I made thai fishcakes from frozen fillets at the weekend and was really surprised by the amount of water that came out of them
