Looking for a nut roast recipe for an all-veggie Christmas dinner

Can anyone recommend any? I'm ideally looking for something that is

  • fully veggie - though eggs/dairy are fine
  • toddler-friendly - as in, no chokeable bits
  • able to be prepared in advance or mostly in advance
  • naice enough to satisfy those who have 'standards'
  • not too expensive - I may have many to feed
  • looks a bit impressive

I've made this one and it's really good and quite substantial. Not wildly expensive - I used up bits of cheese I already had, and the sherry sauce makes it quite christmassy. Maybe use less dried herbs or leave them out completely and add more chopped parsley.

I also made the nut roast that 21 mentioned. It was really nice and liked by a diverse group of people. I'm thinking of making it again but maybe should give the Rose elliot recipe a whirl....

This is very good, I had it every Christmas for years when I was vegetarian. It goes very well with all the traditional Christmassy accompaniments.

2 packs chestnut stuffing
1 pack chopped nuts, cashews or Brazils work well
Handful of cranberries
2 beaten eggs

Make stuffing
Stir in everything else
Bake in loaf tin.

Maybe do it in 2 layers with mushrooms,cheese or sweet potato in between
Very tasty for v little effort

Serve with green bisto instant gravy with added sherry/red wine

I've been experimenting.

I think the consensus was that 21mealspluscupcake's recipe here was the favourite, though BikeRunSki's was also very good, and would be wonderfully quick and easy as a standby for unexpected extras. The DCs found the others a bit too "grown up" tasting

So, for the benefit of anyone else trying 21's...

  • the quantities listed fill TWO 2lb loaf tins, not the ONE it claims.
  • it is very rich, so everyone ate smaller porions than I'd have anticipated. So I'd estimate the recipe to feed up to 15 adults. Therefore, the cost per head is only about a pound, which when compared to the price of a turkey doesn't seem too bad
  • I couldn't find walnuts so used a double quantity of cashews, which was delicious enough. Also, I let DD add the mustard and she put in at least double what the recipe recommended - it seemed fine.
  • the recipe warns against using greaseproof paper. I has nothing else so had to - it worked well enough.
  • the recipe claimed to take 60-90 minutes to cook. I found 60 was plenty
  • the recipe recommended letting the loaf stand for 5-10 minutes after coming out of the oven. I found it needed about 15 minutes

another vote for rose elliot's here!

also you can jazz up Granose cashew nut roasts, if u want an easy life, by layering the mix with roasted peppers, mozzarella, other roasty vege, making a kind of terrine, looks lovely when served too.
