Salmon fillets

Can anyone share with me a good recipe for salmon please? I'm trying it to eat it a couple of times a week to get some healthy Omega 3s but am stuck for ideas.
In the summer I just cook one in foil with a bit of dried dill and olive oil, and serve it with new potatoes and hollandaise sauce but I don't fancy that at this time of year.

I live alone so it's a case of cooking one fillet. I prefer not to fry it as my ground floor is open plan and I cant get rid of the cooking smell for days.
And ideally it'll be a simple recipe suitable for a quick supper on work days.

Our favourite is to rub the salmon fillet all over with a good Cajun spice blend, get the oven nice and hot, slap the fillet in a oven-proof frying pan (no plastic handles!!) skin-side down for a very short time, then pop the whole thing in the oven for about six minutes.

I've made this recipe before and it's pretty tasty. The lentils and bacon make it feel a bit wintery too!

This is really good. If you don't want to grill it, I guess it would work just as well in the oven.

My favorite is to marinate the salmon with soy & ginger, then serve with a stir fry.

Or coat with pesto & breadcrumbs.

Make some julienne strips of carrot and courgette, lay the fillets on top of them in a foil parcel.

Mix up crushed garlic, tablespoon soy, fish sauce, fresh ginger, finely chopped spring onion, squeeze of lime juice, honey. Pour over salmon.

Bake at 180 for 15-20 mins or until flaking.

Serve with noodles.

I do a salmon, leek, onion & potato bake. It's from a very old Jamie recipe where he uses fennel instead of leeks but I don't like fennel.

Basically you fry the chopped leeks & onions until they are soft & a bit brown. Place them in a dish with salmon fillet on top, season & add a couple of spoons of creme fraiche. Top with slices of pre cooked potato (about the thickness of a £1 coin) & bake at 180C for about 20 mins. Then top with a mix of breadcrumbs, grated parmesan & a few dabs of butter. Bake for another 10-12 mins until it is brown. Delicious!
