I always keep it simple and do stuff people can come back for more of if they are hungry. E.g.

whole poached or baked salmon, flavoured with fennel and lemon, with a yoghurt and dill sauce
warm new potato salad with chives and rosemary and lemon zest in oil and honey dressing
baby leaf salad
tomato salad
honey and mustard baked ham studded with cloves
lots of crusty bread, cheddar and stilton
olives and crisps

chocolate log and mince pies or do a big mince and grated apple in puff pastry roll to make it lighter. It's lovely.

Chocolates

Drinks: bucks fizz or champagne with raspberry juice

mulled wine

beer and wine

lots of sparkling and still water, juices and maybe diet cokes for drivers or people who over indulged the day before.

kids bucks fizz: lemonade or sparkling water mixed with OJ

kids mulled wine: warm spiced berry cordial

Any more suggestions?

We have:

bubble and squeak
leftover turkey (in fact, I cooked a turkey on Christmas eve just for leftovers even though we had beef on the day!)
ham
cheeses
bread
olives
crisps
chutneys
various other salads - Delia has a nice pesto/rice one, or cous cous with roasted vegetable and harissa sauce (you can buy packets of roasted frozen veg in Waitrose and other posh supermarkets. Pricey, but worth it on this occasion).
sausage rolls or cocktail sausages

Or another option if you want something less buffet is a big casserole. Maybe a beef and mushrooms in red wine or something. You could do it gluten free quite easily and serve with rice or mash to make it easy to eat with just a fork. Obviously not as easy as a buffet to eat, more 'find a spot and perch', but quite do-able.

We often entertain dh's extensive family over Christmas and this is what I do:

big ham poached in cider
whole side of salmon
baked potatoes or potato and feta salad (with a tarragon dressing)
homemade coleslaw
big pork pie
nice bread
green salad
cherry tomatoes
veggie sticks and houmous for the kids
nice chutney, olives and a few nibbly bits
cheeseboard and cheese biscuits

I've also done a few big lasagnes, salad and garlic bread before now.
In some ways the casserole idea might be easier, though.

Usually other people offer to buy dessert or I make trifle and buy cheesecake.

For drinks we usually offer red and white wine or beer. Have given up buying too many soft drinks as the drivers usually ask for water anyway!

Sometimes I do a hot buffet with a huge chicken curry, beef curry and chickpea curry then all the bits, rice, naan, samosas, bhajis, yogurt traits, mango chutney, sliced onion etc. It's easy enough to eat standing up.

For a cold buffet I would do a selection of
Spanish tortilla
Big ham
Homemade quiches
Homemade sausage rolls
Tandoori chicken
Caramelised onion tart
Spiced pulled pork (to have with baps and coleslaw)
Sausages
Homemade coleslaw
Baby new potato salad
Tomato mozzarella and basil salad
Sweet chilli chicken pasta salad (or without the chicken if there's enough meat already)
Cheeses, crusty bread and crisps and pickled onion and chutney.

On the other hand, you could go and raid your nearest Costco - couple of rotisserie chickens, spare ribs and a couple of gooey cakes.....

We will be putting mulled wine in the slow cooker for our Boxing Day party :)
