I have four chicken breasts I need to turn into an impressive, tasty and quick dinner party meal tomorrow evening

The title says it all really, I'm desperate for ideas other than wrapping in parma ham etc etc which is what I'm likely to end up doing. I will be doing roasted new potatoes, butternut squash and red onion and some courgettes to go with whatever I cook.

Tarragon Chicken. Poulet a l'estragon if you like. Marinate the breasts in a little oil, some lemon juice, a pinch of salt and a little dried tarragon, Fry them gently, then deglaze the pan with a little white wine. Stir in cream and loads of chopped fresh tarragon.

Sounds promising, I'm just scared of frying chicken incase I don't cook them for long enough, much better knowing they've been cooked in the oven.

Yes to tarragon chicken. You can cut the chicken into strips for this dish also, if that helps you to know it is cooked through.

You could also consider a chicken and mushroom stroganoff - saute chicken strips, a sliced onion and halved mushrooms in some oil and a knob of butter. Add some chopped garlic, if liked. Next a splash of brandy or dry sherry, half a teaspoon of paprika or smoked paprika (little less if it is the smoked - it's quite strong), finish with plenty of sour cream, some chopped parsley and salt and fresh ground black pepper to taste. This is the recipe I use and it is no way authentic but it is very tasty. I often add a few caraway seeds as well.

I was also coming on with tarragon chicken.

2 teaspoons dried tarragon soaked in a little white wine.

Brown the chicken in butter in a pan. Place in ovenproof dish.

Deglaze the pan with the tarragon & wine & a small glass of white wine & the same of chicken stock (cube is fine). Add small glass of cream (double is best) & pour it all over the chicken. Taste the sauce & season as you see fit. Put lid or foi lon & pop in oven for 40 mins at 180C.

It will hand around in the oven (turned down) for at least half an hour.

I was given this recipe 30 years ago when I had to cook an impressive meal & it never fails.

I would open up the chicken breasts and flatten them between two sheets of clingfilm by bashing them a little with a rolling pin. Then line with Parma Ham, some defrosted frozen spinach, nutmeg, a little cream cheese, seasoning.... roll up and secure with a cocktail stick. Poach these gently in a little white wine. Remove, reserve, and stir in some butter to the juices to make your sauce. I'd serve simply with some asparagus tips and a butternut crush.
